  • What a day........We have church tonight and I needed to get this book to add to our basket for the silent auction.  So I got up early and figured I would stop at a bookstore on the way to work.  I stop at the mall since, there are two book stores there.  SUrely one of them would have the book I was suppose to get.  NO!!!  So they tell me to try the big Barnes and Noble in Woodbury...ok, sort of out of the way, but near interstate so I can get to work pretty easy.  Of course the book wasn't there either.  So I take my cell phone and start calling around.  Who would have thought this could be this difficult.  So I finally locate the book at the Barnes and Noble in Eagan, MN.  So off I go again out of my way, but closer to the side of town my office is.  I tell them to hold the book and I will be there within 30 minutes.  OK....I get there and get the book, by the time I get to the office it is about noon.  ARGH!!  I was suppose to be taking tomorrow off to spend Halloween with the kids.   I stayed at the office for about an hour or so, then figured since Tommy is at daycare today, it would be a better day to take off, since I had already wasted 1/2 the work day getting this book for church.  ARGH!!!


    So I come home and got my huge pot of soup cooking.  I made a huge pot of Split Pea Soup with Ham.   I have made this before and the family likes it.  So I tripled the recipe.  We had this for supper tonight, plus I froze 3 lunches of it for my work and 5 portions for our suppers.   I figure if I am going to amke soup I might as well make it and freeze some, sure saves time!!   I freeze my soup in gallon sized zip lock bags.  I freeze them flat in the upstairs freezer, then move the following day to the deep freeze downstairs.   I plan on soaking some beans before leaving for work tomorrow.  I am going to make bean and ham soup tomorrow.   I am only going to make a single recipe since we haven't had this one before.   I learned this from last time.  I made 4 suppers of a soup we didn't like.  Now I always make sure we love something before I cook in bulk.   With the internet I find a lot of Once A month Cooking sites and recipes.   If you are a working mom like me, life is so much easier by cooking in bulk and a crock pot.


    I am hoping for Christmas this year, my hubby will get me the new Rival Crockpot they have.  You can set it to cook for how ever many minutes you need then it will warm the rest of the time.  Very Very cool!!  That way I wouldn't have to worrry about things overcooking if I get stuck in traffic, etc. 


    Church class was fine tonight, we talked about developing a family mission statement.    After church we carved our pumpkin.   It had started to rot in the inside....ICK!!! The outside was fine.  Very gross....so no picture of Tommy in the pumpkin. 


    I am starting to get tired, so here is my recipe for Split Pea soup if anyone wants to try it.  This is the single recipe, double or whatever to freeze some.  It does freeze very well.



    SPLIT PEA SOUP WITH HAM
    (8 Servings)


    10 Cups of water
    4 cups Split Peas
    1 Cup ham, diced (I add a bit more)
    1 teaspoon salt
    1/2 teaspoon of pepper
    1/4 teaspoon marjoram, crushed
    1 bay leaf, finely crushed
    1 Cup celery, chopped
    1 Cup onion, chopped
    1 Cup carrots, sliced


    Rinse Peas; combine peas, water, ham, salt, pepper, bay leaf and marjoram in large Dutch oven or stock pot.  Bring to a boil, cover, reduce heat, simmer (don't boil) for 1-1/2 hours.  Stir occasionally.  Add Celery, onion, and carrots.  Simmer, uncovered for 30 minutes. 



     Well I am off to bed.  I am hoping hubby will cut up the remaining two hams we have in the fridge tomorrow for me.  So far I have about 7 meals of ham slices packaged.  The rest is diced for some future things I want to make, more soup and ham and cheese pockets.   My freezer should be getting full of quick meals.   Cub also has buy one get one free sale on Turkeys.  I might get two, if they will fit in the freezer.  I make a lot of stuff to freeze out of Turkey and we are just finishing eating the stuff from my last turkey cooking session.

  • I didn't get any of my soup made tonight.  I have to cut up more ham yet.  I plan on making some Split pea and Ham soup, I will share the recipe soon.  When at the library tonight I picked up a couple of cookbooks with some good soup recipes.  I want to add to our favorites since we eat a lot of soup in the winter. 


    I did get most of my errand done.  I am waiting on going to Cub as I want to make sure I have room for both turkeys I plan on buying.   Tommy was in a pretty good mood tonight considering he had 4 shots today.   I had to have a ""you need to take responsbility for your school work" talk with Josh again tonight.  ARGH!! 


    The rest of the evening I watched the tribute to Paul Wellstone on TV.  Tomorrow is church night so I am not sure what i will get done.   Well I am off to bed.......have a great night!

  • Tommy did well at his Dr Appointment this morning.  I am back at work again so I don't have his stats with me.  I know he is in the 50-75% for weight and 90-97% for height.  He will be tall and lanky like his daddy.  I am able to switch him to Whole Milk now.  The Dr said to discourage him from W sitting since his one leg turns in more than the other.  It doesn't seem to show up too much when he walks, but will be watched.   His soft spot on his head is almost closed, only a fingertip left.  He is doing well otherwise.  He had four shots and wasn't so thrilled about that.  


    I put him down for a nap, then headed to work.   I plan on making some soup this week to freeze.  My freezer is low on prepared meals for those nights I need something quick!  I will have to make a grocery store stop on the way home as well.

  • Today was a good day for a Monday.  I got a lot accomplished at work and even completed a calssroom observation.  I completed all items on my to do list today at home, plus cleaned the living room windows. 


    I put my to do list for tomorrow below, since I might not have time to stop by in the morning.  Tommy has his 1 year Check - up in the morning right away.  I will not have much free time in the morning to play.

    I am running late since I just spent my time scanning Tommy's proofs.  Yes, my little darling cooperated with his photo session this time.  I love the pictures!!  So of course get ready to see them all..............

    Tommy Stood by the #1 and didn't try to knock it over.  They said since this is only the digital proofs is why the ones with the brown packground are so dark.  The pictures we get are not going to be like that!  They better not be!

    Baby Tommy!!

  • Weirdness.....hubby was just outside and two guys were beating a mailbox down the street.  He yelled at them and they sped off!!  Would I do that??  No...I would be afraid they had a gun.  Hmm....as we are getting ready to go to bed I wonder if our mailbox will be standing in the morning.   Hubby didn't get a license plate, so we probably won't be calling the police.  ARGH!!  Vandals...I am sure just some kids, but still!


    UPDATE:  Hubby did call the police so they could do an extra drive through the neighborhood.  Police just stopped by and said they have had another call about mailboxes, so it must be some kids just out joy riding. 

  • Tommy's One Year old Pictures at Sears today was a bust!  He would crawl or walk off or scream.  We made an appointment to try again on Sunday.  ARGH!!!   Not sure what was up with that.  I hope he does better on Sunday!

  • Very Sad News..........Senator Paul Wellstone was killed with his wife and daughter in a plane crash in MN today.   I heard this on the radio while out shopping.  I liked Senator Wellstone and his ideas.   But my deepest saddness is the death of his daughter.  SHe lived two houses down from us on our street.  She had a little boy named Joshua.  All I think about now is this morning when Joshua woke up he had a Mommy and she went on a trip for Grandpa's election.   This afternoon, he will be told his mommy won't be coming back.    That breaks my heart, I just can't imagine the pain that will cause.  We weren't terrible close to the family, but little Joshua did play with my children.   I pray for him and hope he makes it through this ok.   I can't imagine my children being without me......


    Please say a prayer for Joshua.  No child should have to deal with this.

  • FRIDAY!!!!!!!!   I took today off of work.  I am glad I did.  I slept in until 7:45 which was really nice!  We got up and got ready for ECFE class.  Today we had a substitute teacher, Julie.  We had a guest speaker, a nurse to talk about nutrition.  She answered a few questions I had. 


    I hope to make good use of my day off and get ready for Tommy's 1st Birthday Party Tomorrow!   I can't wait.....
