Morning everyone....
Well this morning I slept in a bit, since the night before my darling baby was up at 4:00am thinking it was party time. So I caught up a bit on sleep this morning...WHEW!!
Last night I worked until about 8:30 so it was a long day. today I am in the office mostly but am going out to lunch and them a few of us are going to check up on a group home for autistic boys that we opened last week. Just going to take a walk through now that the boys are there and make sure everything is going well still.
I hope to get home at a desent time tonight night. I have to work on doing some laundry. My drain has been clogged down there so we poured drano down it again last night, I hope that helped. I need to get clothes washed and pack Joshua as He is going to Florida with my ex-husband. Another incident of over indulgence by an ex. Something with live with on a regular basis.

It's Monday! Time to return to work and my normal routine. I certainly welcome that. Today is a regular day at work, just catching up on paperwork and things from being out of the office all last week.

UPDATE: GRRR....car trouble again. The car starts and I head to daycare. I get ready to leave after dropping off Tommy and the car won't start. Hubby comes and we buy a new battery I hope that takes care of this. The mechanic says it is not the alternator, but I wonder if it might not be anyways. We will see in a few days, that should be what it takes to run this battery down if it is a alternator.

AAAAh....the end to a relaxing evening of doing what I wanted. I am getting ready for bed now after a nice evening. Tommy and I got home around 8:00 and hubby had left for the bachelor party already. So I gave Tommy a bath and then we crawled in my bed with snacks and watched Elmo before bed. Once Tommy was down for the night I went and ran .82 miles on the treadmill. Not too bad considering I had not been doing it at all for almost a month again.
After working out a bit, I watched Home and Garden TV all evening. LOL!! Paul doesn't like all the decorating shows, but I do. So I painted my toe nails and watch HGTV. AAAHHH...a relaxing evening.
Now I am heading to bed and going to read for a bit. I have a feeling it will be a late, late night for my hubby. Isn't that usually how bachelor parties go! As long as he comes home safe! Night All!
BTW, love the Pilates video I checked out...I did about 1/2 of the exercises and I can feel it in my abs. YIKES!! Wonder how I will feel in the morning? -
Busy, Busy Saturday....
I stayed up way to late last night working on my wed page. A friend called me at about 9:30 and I was still sleeping. OOPS...I was meeting her in Red Wing for a BBQ at another friends house. She was leaving in the morning at they were taking the house boat down there. It is about a four hour trip by boat. I of course was going to drive and pick her up at the Marina in Red Wing.
She jsut called though and is running really late as there was a two hour wait at one of the locks on the river. So they were turning back and going to dock at the casino and spend the night there.
So I think I will still head to Red Wing for a short bit. I don't think I will stay too long as it is a bit of a drive. I just realized I needed to dring a dish to pass...OOPS...so I quickly made a cucumber salad. I need to be out of the house for a few hours as hubby will be bug bombing the house when he returns home from work. He is going to a friends bachelor party this afternoon with his buddy Brian. So I would like to be home in the evening as I think it will be a great quiet evening alone with my book and a nice drink.
But going to Red Wing will get me out of the house enough so he can bug bomb, etc. Tommy just went down for a nap. I will wake him up in about an hour so we can get on our way to Red Wing.
Since i am home alone tonight, it will be a great night to go running on the treadmill after Tom is in bed. I haven't beening running at all this week. I also checked out from the library today a new Pilates video I want to try. I lifted weights last night and my arms a bit sore. So I think I will skip lifting tonight.
Today must be the party day of the year! I have been invited to a number of parties today!
1. BBQ in Red Wing
2. Neightbors Surprise 40th B-day
3. Kidney Party for a woman I work with who is giving her kidney to her nephew. So they are throwing a good bye party for her kidney. We are goofy at my work, but have enormous fun.
4. Paul is at the bachelor party.
Time to quickly pick up the house and get stuff ready to go. Chat at you tonight! -
GRRR....well Recipecircus.com is back up and running. But now that I am 1/2 through moving my recipes to my webpage, I think I will finish doing that. I like my lay out better anyways.

I am an unhappy webpage maker today! I had recently raved about a great site I found, RecipeCircus.com. I had moved all my recipes over there only for it to be now GONE!! GRRRRR...
I made a new layout on my homepage for my family cookbook, so now I have to move everything over there. GRRRR...but I must say mine is cuter since I can do my own HTML. But Recipe Circs was slick! Oh well.......- 5:04 pm

DRESSED-UP BACON BURGERS
¾ cup mayonnaise
3 tablespoons sweet pickle relish
3 tablespoons ketchup
1 tablespoon sugar
1 tablespoon dried mined onion
1 tablespoon Worcestershire sauce
½ teaspoon salt
¼ teaspoon garlic powder
¼ teaspoon black pepper
2 pounds ground beef
8 bacon strips
8 slices cheddar cheese
8 hamburger buns, split and toasted
Lettuce Leaves
In a small bowl, whisk the mayonnaise, pickle relish, ketchup, sugar and onion until well blended. Cover and refrigerate. In a large bowl, combine the Worcestershire sauce, salt, garlic powder and pepper. Crumble beef over mixture; mix well. Shape into eight patties.
Place bacon on a piece of heavy-duty foil on one side of the grill. Place patties on the other side of the grill. Grill, covered, over medium-hot heat for 20 minutes or until bacon is crisp and meat patties are no longer pink, turning once.
Drain bacon on paper towels. Place a cheese slice on each patty; cover and grill until cheese is melted. Layer bottom half of each bun with lettuce, patty, bacon and mayonnaise mixture. Add bun tops. Yield: 8 servings.- 2:40 pm

Not the best of day yesterday. I went in to work for a few hours and the car seemed to work ok. I have to go in this morning for a meeting as well. I am dragging, I have been so much more tired this week. You would think working from home would be more relaxing....NOT!!!
Yesterday I ended up grounding Erik. He broke the window in the front of the house. NOw had it been an accident like while playing ball, I would not have been so angry. The reason he broke the window was he was mad at his friend and so he threw an apple at the house, trying to hit the bricks, but instead put a huge hole in a window. To my it is never an ok excuse to do anything in anger. I asked him if heh as ever seen his father or I ever throw anything in anger??? No...then obviously it is not a good choice for handling disupts. He stayed in his room until supper, then he spent the rest of the evening doing chores to pay off the window at 50 cents a chore. He was not a happy boy. But then again I was not a happy mommy. Every time he compained, he got another chore. he soon figured out not to complain.
Well I best shower and head to work. Argh..what fun! NOT! I need a day off with no children at home! -
GUACAMOLE
3 ripe avocados, medium sized
½ of a medium sized white onion, diced
3 tablespoons fresh cilantro, chopped coarsely
1 teaspoon minced garlic
2 Tablespoons lime juice
½ tsp salt
Ground black pepper
2 Tablespoons of sour cream
Cut avocados in half, remove pit and spoon out insides. Place in a mixing bowl and mash minimally with a potato masher. Add onion, cilantro, lime juice, salt and pepper, and sour cream. Mix until combined and chunks of avocado are still visible.
Bean & Rice Burritos
1 can (15 ounces) black beans, rinsed and drained
1 can (14.5 ounces) diced tomatoes, drained
2 teaspoons garlic powder
1 teaspoon ground cumin
2 cups cooked rice
12 flour tortillas (7 inches), warmed
4 ounces process cheese (Velveeta), cut into 12 slices
1 cup (8 ounces) sour cream
In a large skillet, combine the beans, tomatoes, garlic powder and cumin; heat through. Stir in the rice. Spoon about 1/3 cupful off-center on each tortilla. Top with cheese. Fold sides and end over filling and roll up. Serve with sour cream. Yield: 6 servings.- 3:42 pm

Morning. I went to bed early last night and read for a bit. I was so tired for some reason. Today I have to go to the office for a meeting from 9 to 10, then I am home again. Josh is going to watch Tommy for me and Erik is sleeping over at the neighbors.
The Rice & Bean Burritos went over pretty good last night. Hubby just loved them! Erik ate them and Josh said they were ok. Tommy woldn't even try them. LOL!! I will share the recipe, it was quite easy.
Later have to hit the shower and get to work. Have a great day!
