  • Add some tried recipes to my cookbook. Thought I would share.
    APPLE STRUESEL MUFFINS

    1 package (6-1/2 ounces) apple cinnamon muffin mix
    1 larger tart apple, peeled and diced
    1/3 cup chopped walnuts
    3 tablespoons brown sugar
    4-1/2 teaspoons all-purpose flour
    1 tablespoon butter or margarine, melted

    GLAZE:
    ¾ cup confectioners’ sugar
    ½ teaspoon vanilla extract
    1 to 2 tablespoons milk

    Prepare muffin mix according to package directions; fold in apple. Fill greased muffin cups three-fourths full. In a small bowl, combine the walnuts, brown sugar, flour and butter; sprinkle over batter.

    Bake at 400 degrees for 15 - 20 minutes or until toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Combine the glaze ingredients; drizzle over the warm muffins. Yield: 6 Muffins

    Freezes Well………

  • I GOT IT, I GOT IT!!! My friend finally posted her mom's recipe for this wonderful shrimp mold!! YUMMY!! YUMMY!! She brought it to our house for a party. It was a huge hit!

    Shrimp Mold

    o 1 large package cream cheese
    o 1 can tomato soup
    o 2 packages Knox gelatin, plain
    o 1/4 cup water
    o 1/4 cup shrimp juice
    o 1/2 cup green or red pepper
    o 1 small onion
    o 1 cup mayonnaise
    o 1 cup shredded shrimp
    Instructions

    1. Heat soup and cream cheese until smooth.
    2. Add shrimp juice.
    3. Dissolve gelatin in 1/4 cup water.
    4. Mix with soup; let cool while ou cut up rest of ingredients.
    5. Dice celery, onion, green pepper.
    6. Add shredded shrimp.
    7. Put all ingredients into soup and mix well.
    8. Add mayonnaise; pour into mold.
    9. Put into refrigerator until set.
    10. When ready to serve, unmold onto platter; surround with crackers.
    11. Use as spread.

    Keeps well in refrigerator for week or more.

  • I am working from home today, but between the things I need to get done, I will probably only get 4 hours in and have to take vacation for the rest. We will see. I went in and had my depo shot this morning. Tommy was up again last night, even with me giving him Motrin before bed. So I am taking him to the clinic to have his ear checked at 4:20. He is at daycare right now. I am sure they will tell me it is only teething, but after taking to the ER a few weeks ago with a nearly ruptured ear drum I am a bit nervous. Our peds is wonderful so I know he will put me at ease.

    Tonight we have church, Families First. I have some flyers for upcoming Mommy and Me events to put up at church as well. I should have gotten them out earlier, but oh well. I have been swamped. I received the Christian Parenting magazine in the mail today. I just skimmed it but found some interesting articles.

    I am finally back into reading. AAAH....I am really enjoying Crow Lake, which my book group is discussion this month. I am also listening to "I know this much is true", also very good. I enjoyed Little Women too and hope to continue my listening of the classics. I was thinking of getting the bible on tape to listen to that all as well. We will see.......

  • Well the snow has gone and the city is a mushy mess.   Today is definitely a high Mt Dew day.  ARGH!!  I thought I was tired yesterday, actually almost dozed off on the way home from work last night twice.  Last night Tommy was up from 2:00 to 5:00am.  I had to cancel a meeting this morning as I just couldn't in good conscience go out on the road with that much of a deficeit of sleep.   So Tommy and I slept for 5 am to about 10am.  Then we got ready and headed off to daycare and work.  I am not sure what is going on with Tom.  He is getting his two year molars, has a runny nose and isn't sleeping well.  If he doesn't sleep tonight I am taking him to the Dr tomorrow to have his ears checked.  I can't imagine that he has an ear infection as he was jsut at the Dr last Monday for a recheck from his previous ear infection. 


    I have a meeting late this afternoon to meet a new client.   I hope to work from home tomorrow so I can get caught up on paperwork and be at home in case I need to take Tom to dr.  I am so lucky my employment is so flexible.   I am off to lakeville, MN for an appointment.  Later!

  • I sure wish I had a digital camera.  A fresh blanket of snow has fallen on the city.   It is so crisp and clean.   I always love the first snow fall, but by February am not as happy with it.  But it sure is beautiful today.   I was out driving in the weather all morning.  I have meetins in S St Paul and Lakeville so that is a bit of a haul.   I did have enough time to finish listening to Little Women.   I really enjoyed the story.  I thought I had read this in the past, but I didn't recall it. 


    Well off to finish eating my lunch and heading out to another meeting in Apple Valley.   Busy day....

  • I headed to bed early last night, but got cought up in my book and read almost 1/2 of it last night. I think I will be able to finish it in time for book group. WOO HOO!!! I will have to see if I can find any discussion questions for it. I best get ready for work, I have a busy day of meetings. I will be in the van a lot today so I should be able to finish my BOT. I am listening to Little WOmen and I am really enjoying it. Next on the listening list is I know this much is true by Wally Lamb.

  • Hello - I haven't been online today much, but thought I would stop in before bed. Yeah it is only 8:49, but I am so tired, so I might as well go to bed early and read. Start the week off well rested!

    Today was a pretty layed back day. Church in the morning, Tommy was in rare form. He was very clingy and upset before church. I am not sure what that is about. I think he is cutting another molar, plus he has a runny nose. All that equals a cranky little boy who wants his mommy. So that was where i was most of the day, with Tommy. I did manage to do a load or so of laundry. I made a really good beef stew in the pressure cooker. i will share the recipe real soon! Hubby went and added some more tomato paste to the leftover and ruined it for me. I guess that is one way of ensuring you get to eat it all!! LOL!!!

    Friday is payday and I hope to purchase from amazon the book my book group is reading in December, The Da Vinci Code by Dan Brown. I don't know much about it, but did here the tail end of a radio bit on it. I also will buy a few books for Christmas as it is free shipping with orders over $25.00. My favorite gifts to receive and give are books!

    Hubby did rent a movie for us to watch this weekend, but it was grossing me out!! I didn't finish watching it. It is a stephen King movie, "dream Catcher!".

    I think Tommy has settled down for the evening. I am off to read, hubby is enjoying the Vikings game...GO VIKINGS! Well....a nice ending to a quiet weekend.

  • I have spruced up my bedroom and started supper. The baby is still sleeping. It think i will have to wake him soon so he will sleep good tonight. Time to go check on the laundry again. I forgot to start the dryer before. OOPS!!

  • OH MY!!! HOw freeing is this?? I just finally had a moment to read about protected blogs. I think I might give it a try yeah!!!!!! I am excited! There are some things that I wouldn't want to discuss with the world. My subscribers yes, but not those people that I know read and aren't subscribers! I still have to read a bit more about the protected blogs to ensure I feel really protected. YEAH!

    Well my timer is going off...time for me to go back to work. I have completed a load of laundry, dishes, and scrubbed the kitchen and bathroom. Now I am off to spruce up my bedroom!

  • My little sweetie hasn't gone to sleep yet. I went in to check on him and he has taken out every book on his shelves and was playing "guys" behind the rocking chair. So I read him another story and tuck him in again. He is starting to not go down so easy for naps. I am wondering if he will outgrown naps soon. I sure nope not since I need a few hours a day to get housework done.

    Off to complete more housework. I just finished washing the dishes. Now I am off to start more laundry and do the kitchen floor. See ya when I get that done!
