  • Had Shake and Bake Chicken on the menu tonight, but had to improvise when I didn't have enough Shake and Bake for all the chicken.  It turned out pretty good!  


    Shake and Bake


    4 cups dried bread crumbs
    1 tbsp. Paprika
    1/2 Cup flour
    4 tsp. salt
    4 tsp. Sugar
    4 tsp. onion powder
    1 tsp. garlic powder
    1/2 cup shortening


    Mix thoroughly.  Dip chicken or pork in milk, put shake and bake in plastic bag and shake.  Bake at 400 degrees for 50 to 60 minutes.  Keep remainder of mixture in the freezer until needed again. 

  • Tommy is napping so I best get off the computer and use my time wisely and get the dishes done before my little helper is up and ready!    Later!

  • Well guess who woke up at 3:00am this morning and was sick!  ARGH!!  Seems Tommy has shared his bug with me.  Looks like I will be staying home today and not going to the library and post office.  Maybe I will feel up to getting a few things around here done.   Time for me to hit the shower, feeling sick or not, I must get dressed or what would the flylady say!

    Well the floor boards are vibrating so my oldest son must be awake.  He loves his loud music!

  • Tommy seems to be on the mend.  No throwing up most of the day today.  YEAH!!  He did take a very long nap and was very clingy.  I jsut finished the spreadsheet of our out of pocket medical expenses for the year.  I was surprised that our co-pays etc added up to over 1600.00 we paid out of pocket after insurance.   I was very sick the begining of the year with a hospitalization.  So I have that done, now we are just waiting for all our documentation to come in and we will go to H&R Block to have our taxes done.   Now I know where all my money went, not to mention nearly 5000.00 in daycare expenses.  I hope we receive a good return from the IRS.


    My friend at work asked me to be a bridesmaid in her wedding in September.  She had the bridesmaids all picked out and one of the brides maids couldn't be in the wedding as it is on Yom Kipper.   So I tried on the dress she had.  It is one size smaller than I am currently wearing.  ARGH!! I could get in it and zip it up, but it wasn't very attractive!  So I guess I have some motivation to lose a few pounds!  ARGH!!  It is a very pretty dress.   I guess I have until September to fit nicely into this dress!  Time to start lifting weights again.  I say this each day, but never seem to make it down stairs to do it.  


    Tonight we watched a movie from the library, Two Week Notice.  It was pretty good.   Let's see nothing else too exciting.  Oh..I know I scheduled a Pampered Chef party for March 5th.  There were a few things I wanted and no one I knew was having party, so I decided to!  I hope I have a good turn out!   The last party I had was in 1999 before we got married.  


    Tommy is in bed, so I guess I should head there myself before he wakes up.  Maybe since he is feeling better he will sleep through the night??  One can hope!

  • Well Tommy is sleeping so I should scoot and do a few things around the house while he is sleeping.  Once he is awake he needs to be held all the time.  He really isn't feeling too great.  I am going to tru to get threw a bit of mail, then do my chores.  Later!

  • Book group was fun last night.  We had a good discussion about the book.  I have started the next book am struggling a bit with it, but I am listening to it on tape, so I should make it through it.


    I got home last night at about 10:00.  I pulled into the driveway and could see my hubby was doing something through the picture window.  He sees me and runs to the door and yells, "Hurry I need your help."  YIKES!!  I get into the house to Tommy covered in puke!  He was sitting on the couch and had puked all over.  He gets very scared when he pukes and once he starts it is hard to get him to stop!   ARGH!!  So for 10:00 until about 4:00am I tended to Tommy and cleaned up puke.  He got our bed (hubby's side), his bed a couple of times, the couch and the floor!  Finally at 4:00 he was asleep and I went to bed.   So needless to say, we are home today.  He has been doing pretty good this morning.  He won't eat, but I have gotten him to drink a bit of pedialyte and coke.  He also ate two crackers.  


    How we are heading to Mommy's bed to watch a movie and hopefully take a nap.  WOW, am I tired!  I have a bit of pukey laundry to do today as well!  Never a dull moment in our house.  Later!

  • Tommy slept through the night for the second night in a row!!  I will not be home tonight, but I told hubby to keep his routine the same.  Hopefully he will sleep.  I have been letting him watch one episode of Blue's Clues in my bed with me before he goes to bed.  I tell him " Blues Clues then you sleep in your bed".  He seems to be content with this and he does get to snuggle in Mommy's bed. 


    Tonight I have my book discussion group, so I won't be home until very late.  Hubby is in charge of the kiddos.  So we will see how he does with the routine.  Our book Group is discussing "Curious Incident of A Dog at the Night-time."  Most of us work in the field of developmental disabilities so it should be an interesting conversation.  I just started listening to Wuthering Heights.  It might take a bit to get into this book.  We will see.

    I heard an interesting discussion on talk radio this morning.  They were talking about a study that found that 1 in 3 children eat fast food at least once a day.   I was really surprised by that.  My children do not eat fast food nearly that often.  I don't know any child that does either.  At our house if we ate out once a week, that would be alot!!  We might eat out about once a month.  They were saying that this fast food trend is what is leading to a large incidence of childhood obesity.  Obviously any one that knows my family knows none of us have a weight problem.  I am the only one that would like to lose wieght, but I am not overweight, I am within my ideal weight range.  I would just rather be on the lower end of the range due to my risk of developing diabetes.    My hubby and children are all very skinny, not sure that is related to not eating much fast food though.  I don't buy much processed food.  I cook from scratch frequently. 


    It is so cold today!!!  YIKES!!  It is 11 degrees below 0.  There is a bit of a wind so it feels much much colder!  I am heading to Target to buy a couple of extra pairs of tights to wear under my pants as this cold stretch is suppose to last for a bit.  Ya gotta love Minnesota!  You can't be vane in MN, you just have to bundle up!

  • YEAH!!! Tommy slept through the night in HIS bed.  I was able to get up early and to the office earlier.  I am trying to slide my work hours to be earlier so I can get home earlier and have time to make supper, etc.  Of course I won't be able to do this all the time, but would be nice to do it occassionally, especially on Tuesday and Wednesdays. 


    Tonight is Families First at Church.  They are havinga professional organizer come chat with us.  I hope she is good.   Certainly a topic of gret interest to me, but the one last yer was a joke!  next week we will be skipping Families First as they have a Teen dating and sex speaker for the confirmation students that we want to attend instead. 


    I have finished my lunch, so time to get back to work.  Later!

  • Fairly productive evening.  We stopped at the bank and library before picking up Tommy.  For supper I made a chicken bake, hubby is taking the leftovers for lunch tomorrow.  I made chicken salad this evening for a quick supper tomorrow night before church. 


    I should head to bed, I need to try to get some sleep tonight.  I hope Tom cooperates.  He is sleeping in his bed now.  Hopefully he makes it all night long.   I hope to get to work earlier tomorrow so I can get home early for church.  Have a great evening....


    Oh, yah and hubby and I work a bit on our will stuff tonight.  HOpe to work on that a lot this weekend!  Later!
