  • Turkey Noodle Soup

    carcass of turkey
    water
    celery, onions, carrots, red and green bell peppers
    poultry seasoning
    black pepper
    seasoned salt

    I placed all of the ingredients above in a LARGE stockpot and simmered it for 3 hours--adding water when needed. The smell was divine!

    After the stock was made, I strained it discarding all of the veggies and the turkey bones.

    Place the stock in a large stockpot and bring to a boil. Add one LARGE can of cream of chicken soup--98% fat free is wonderful--and one soup can filled with water. Stir the soup into the broth until well mixed and lower the temperature. Add more poultry seasoning and pepper. To this mixture, add the reserved turkey pieces, chopped carrots, chopped celery, chopped red and green bell pepper, and chopped onion. Cook this until the veggies are done. Then add fine egg noodles to this mixture. Stir the mixture until the noodles are covered with liquid. Add more water as needed. When the noodles are cooked, the soup is done. This is a hearty, healthy soup!

    This freezes beautifully. Put the soup into the refrigerator overnight, or until cool. Package in 1-quart serving containers. When you want homemade soup--defrost a package and you're in business! This soup smells as wonderful as it tastes!


    *** I am posting all these recipes I have tried in the last week or so as I have to add them to my website before I lose them!!!  LOL!   Hubby gets so mad when I lose a recipe.

  • Chunky Applesauce (recipe from Fix It and Forget It)
    8 apples, peeled, cored, and cut into chunks or slices
    1 tsp cinnamon
    1/2 cup water
    1/2-1 cup sugar, OR cinnamon red hot candies

    Combine all ingredients in slow cooker. Cook on low 8-10 hours, or High 3-4
    hours. Makes 8-10 servings.


    **  use only 1/2 cup of sugar!  I put in 1- cup and it was too sweet!

  • Crockpot Chicken Barbecue

    A tasty crockpot chicken barbecue, posted by Ness.

    INGREDIENTS:



    • 2 boneless, skinless chicken breasts
    • 1 1/2 cups tomato ketchup
    • 3 tablespoons brown sugar
    • 1 tablespoon Worcestershire sauce
    • 1 tablespoon soy sauce
    • 1 tablespoon cider vinegar
    • 1 teaspoon ground red hot pepper flakes, or to taste
    • 1/2 teaspoon garlic powder

    PREPARATION:

    Combine all ingredients for the sauce in the slow cooker. Add the chicken, try to coat it well with the sauce.

    Cook on high 3-4 hours, or until chicken is fully cooked all the way through. Then shred or cut up the chicken, and replace it in the Barbecue sauce in the pot; mix it all up so all the pieces are coated.


    ***  A bit too vinegary....add less

  • Easy Pot Roast (from Flylady site)


    Large enough roast to feed your family (and to have some leftovers!)
    1 can cream of mushroom soup
    1 can cream of celery soup
    1 envelope onion soup mix
    1 onion, cut in chunks
    1-2 cloves minced garlic
    I bag frozen stew vegetables (or fresh if you would like...I also have used canned carrots...whatever you have on hand)

    After you have finished your morning routine, dump everything in the crock pot except the bag of veggies. (You can even pot the roast in frozen if you forget to thaw it the night before!) Cook on high until the kids get home from school. (6-8 hours) Then put the bag of veggies in with the roast and let cook for another 2 hours. That's it! It will be falling apart so there is no need to even slice it! It will make it's own gravy so have a big pot of rice ready! Delicious and easy! - Flychick in McComb, Mississippi

  • Brenda’s Baby Backs (from Flylady Site)


    These ribs are melt-in-your-mouth tender, and unbelievably EASY!


    2 racks of baby back ribs (or less)
    BBQ sauce (about 1 C)
    Garlic powder
    Onion powder
    Apricot Jam (optional)

    Spray your crock pot with “Pam”. Sprinkle garlic and onion powder (to taste) over the ribs and rub it in slightly.


    Arrange ribs in crock pot so that as much rib surface as possible touches the crock surface. (I usually stand them on edge, wrapping them around the sides of the crock pot.)


    Cook on low, until the ribs are tender (8-10 hours). For last half hour of cooking, remove ribs from crock and discard liquids which have accumulated in the pot.


    Spread your favorite BBQ sauce* liberally on ribs, and return to crock pot for remainder of cooking.


    *I like to mix 2/3 C Smoky flavored BBQ sauce with 1/3 C Apricot Jam to make my Cup of BBQ sauce….yum! - from Las Vegas


    ***  We made this with country ribs and didn't add the apricot ribs...very good!

  • News of the day.......



    Saw my first snow flakes while driving to work this morning.   Gotta love living in Minnesota!


  • Well my Monday is on its way...jsut back from an IEP meeting for a client.  I can't tell you how many IEP meetings I have to attend this month.   Josh of course called me on my cell, gotta say I love these new cells we got.

  • 6:30 and I have a load of laundry going and have folded one load too!   I have finished my email and breakfast and now it is off to shower and get to work.  I have an early morning meeting and luckily for me Josh has no school today so he can take Tommy to daycare for me.    He will be so happy to be woke up.    He is also putting supper in the crockpot for me.   After work I have a meeting at church, I won't be home until after 8:00.  Night #1 being out late......2 more to go!   I can do this!!

  • Well it is the end of a wonderful weekend.    This is the first weekend my hubby was home and didn't have to work.  I thought I would not like it, but wow what  a difference!!  I got so much more accomplished since there was an extra set of eyes to supervise Erik.    He of course got in trouble over the weekend, but it wasn't such a big deal since it wasn't just me trying to do the household things, care for Tommy and make sure Erik doesn't do something he isn't suppose to.   In some regards Erik requires more supervision than Tommy.   Plus my hubby wasn't so tired all weekend.  He was able to get alot of yard work done and other outside things.   He usually was so tired after going to work at his old job at 4:00am.   It is worth the cut in pay to have my wonderful hubby back.


    Friday - I worked late and Josh and Amy  took Erik with them to the mall search through church.  Erik really looks up to Josh so he was very excited to go.  They all ha a great time.  I didn't get home until 9:00pm from work.  Glad to have the weekend!


    Saturday - We tried to stay with our normal routine, but hubby was needing to make up for some lost sleep.  So the boys and I left around 10:30 and ran our normal Saturday errands.  We went to the bank, library, Target, and the toy store.  I took the boys to the toy store so they could show me what we should write in our letter to Santa!  Erik makes alot of lists, but he only can think of things from the ads.  He has to see some thing to think he might want it.  He is VERY impulse driven.  Tommy found a couple of things he wanted too!   ToyStory toys of course and Nemo and a view master.   I will probably go back and buy a couple of the things they wanted.   Since we had a late start, we got home a little later than normal, but had lunch and tried to get Tommy to sleep.   I was wondering how it would work this weekend with hubby home since I keep the TV off most of the days.   I just enjoy the peace.  Actually hubby was great with it and was out and about doing things or on the computer.  He just had more energy I think with better rest.  I cleaned about an hour on Saturday and did a bit of laundry. 


    After supper we had a little bonfire with friends.  After it was time for Tommy to have a bath and get ready for bed, I watched a movie (Raising Helen) and worked for two hours.  I didn't have 40 hours in yet since I was off on Monday and Tuesday due to daycare being closed. 


    SUNDAY - up and went to church.  We even got to church early.  Everyone was up and ready on time for once.  LOL!!  the sermon was very good about being a christian.  After church we went to Target to buy Erik a new pair of black shoes for church.  The ones he had hurt his feet so he had to wear his brown ones.  I always makes sure my boys have brown and black shoes for church.  After going to target we came home and I made a big brunch of hashbrowns, scrambled eggs, and sasuage.   Amy joined us too!   Josh had to work today in the afternoon.  


    After brunch I went to my room to read for a bit, but ended up taking a nap.  Tommy and I both napped.   After our naps I got up and washed up brunch dishes and started peeling potatoes.   My mother had brought me about 10 pounds from her garden and I needed to do something with them so they wouldn't spoil.  I boiled up 15 pounds and made mashed potatoes and froze 5 meals of potatoes.    With me working late so much it is handy to have things for hubby to jsut heat up, otherwise the kids eat at Mcdonalds every night I don't have something planned for him. 


    So tonight I prepared some ribes for the crockpot.  Josh will start them tomorrow morning since I have to leave for work early and I will be out late as I have a meeting at church after work.   So I have ribs and mashed potatos for them.   I also took one of my Thanksgiving in a Pan out for them to thaw for Tuesday night since I will be working late.  Wednesday they could eat at church if they wanted, otherwise i will get something ready for them!  I really have to plan ahead this month since I am gone so much.  


    Thursday I have the day off since it is a holiday.  I think I might do some cooking and get some meatloafs in the freezer for nights I work late.  Probably some pizza pasta too!   Time to stock up!!  Friday I might make my rotiserre chicken in the crockpot so I can use the carcass to make soup on the weekend.   No waste in my kitchen!!  


    Well that was our weekend, Tommy is still goofing around in his room.  I think it is time for me to read and go to sleep.  I hope you all had a great weekend.
