  • Well time to call it a night.....Tommy and I are heading to bed.  Hubby is on the computer and Tommy and I are tired.  I have again given up on forcing Tommy to sleep in his bed.  He falls alseep with me and then I take him to his room.  He wakes up in his room every morning.  Kind of surprises him.  


    I didn't quite make it through the laundry today.  I have a few loads to do tomorrow to be all caught up.   I also need to take Tommy to get his haricut tomorrow.   We tried to do it tonight, but they were closed by the time we got there.   So we stopped at Cup and Cone and got Tommy and Daddy a treat.   They both enjoyed that.   Good Night!

    CHICKEN BURRITOS
    Serves 6


    2 cups leftover chicken meat, chopped
    1 16-oz. can black beans, drained and rinsed
    1 teaspoon cumin
    1 teaspoon garlic powder
    1/2 cup jarred salsa (or more if you wish)
    6 whole wheat flour tortillas


    Optional Garnishes: shredded lettuce, shredded cheese, sour cream, chopped cilantro, salsa, avocado slices, chopped tomato


    Take the leftover chicken you've picked off the bones of the bird and mix in a saucepan with beans, cumin, garlic powder and salsa. Cook over medium-low heat to blend.


    Warm up the tortillas; fill with chicken/bean mixture and garnishes of your choice.


    Per Serving: 363 Calories; 9g Fat; 18g Protein; 51g Carbohydrate; 6g Dietary Fiber; 27mg Cholesterol; 684mg Sodium. Exchanges: 3 1/2 Grain (Starch); 1 1/2 Lean Meat; 0 Vegetable; 1 Fat.

    SERVING SUGGESTIONS: Serve with a big green salad.

    ROAST CHICKEN


    Serves 6

    1 whole roasting chicken, rinsed and patted dry about (5 to 6 pounds)
    2 medium stalks celery, cut into pieces, divided
    2 onions, quartered, divided
    2 carrots, cut into 2 inch pieces, divided
    Salt and pepper to taste
    Garlic powder to taste
    1 tablespoon whole wheat pastry flour
    1/3 cup water


    Preheat oven to 375 degrees.
    Clean out your bird. Rinse and pat dry. Save the chicken neck. 


    Put one celery stalk, one onion and one carrot inside the cavity of the bird; place it in a roasting pan and sprinkle it with salt and pepper and garlic powder to taste.


     Depending on the size of your bird. It should take about an hour and a half to roast. When the chicken is done, the leg will move easily in the socket.


    While the chicken is cooking, take one carrot, one onion and one celery stalk and the chicken neck and throw them all into a 2-quart stock pot. Cover with water and cook on low to make additional stock for the gravy. Once done, set aside.


    Now make the gravy. Remove bird from roaster and keep warm. Pour all the cooking juice out of the roaster and into a bowl to cool. You can speed up this process by putting the juice into the fridge or freezer. The fat will glob up on the top and then you can skim this nasty stuff off and throw it away. Return the defatted pan drippings back into the roasting pan and deglaze your roaster.


    In a small mixing bowl, mix the flour and water into a smooth paste-no lumps allowed!  Heat the deglazed cooking juices, then add the neck broth and the flour/water paste. Using a wire whisk, whisk like a crazy woman over a fairly high heat until your gravy starts to look like gravy. Remember, you want all those yummy browned bits on the bottom integrated into the gravy. That's what it gives it its flavor.


     When nice and brown and beautiful, remove from heat; check for flavor and salt and pepper to taste, if necessary; pour into a gravy boat.


     Per serving: 364 Calories; 23g Fat; 30g Protein; 7g Carbohydrate; 2g Dietary Fiber; 141mg Cholesterol; 132mg Sodium. Exchanges: 0 Grain (Starch); 4 Lean Meat; 1 Vegetable; 2 Fat.


      DO-AHEAD TIP: Pick every last ever lovin' bit of chicken off the bones for Chicken Burrritos. Save the chicken carcass for Chicken Soup. 


    I didn't make the gravy....since I don't really like gravy and it seemed like too much work! But it was very good!

  • Still doing laundry.....but did squeeze in a little nap/reading.   Now I am going to take Tommy to get his haircut.  It is starting to look shaggy.    Then it is home to make Chicken Burritos for supper and work some more on the laundry.   Hopefully I will get all the laundry done today and I don't like to do that sort of chores on Sunday.   Hope eveyones day is going well! 

  • SATURDAY.......


    Today is the day of laundry, laundry....laundry...I didn't keep up with it this week very well during the work week.    This morning we are going to the library after hubby gets home from work.  


    Supper tonight will be homemade chicken burritos from the leftover roast chicken from last night.    NOt much else going one.......it is dreary out so a nice quiet weekend really sounds great to me!!  


    Josh is going to St Cloud with his GF and her mother to meet Amy's dad.  I think Josh said her dad was moving to California soon.   So just hubby, Tommy and I around the house today.   I think I might make some homemade playdoh today with Tommy.  He loves that!

  • It is early bedtime here at our house....JOsh isn't even home from work yet.   I am heading to bed and going to read for a while.  I will probably fall asleep before too many pages.   Hubby is working some overtime tomorrow morning so that is very helpful for our budget!    We are waiting for him to come home and then we will go to the library.    I plan on spending the morning getting the laundry caught up!   I have ALOT to do!

  • We just got back from Half Price Books.   I needed to pick up my book for book group and of course I found a few others that were on clearance that I wanted to read.  My bookshelf is overflowing as usual.

  • Man am I looking forward to a quiet weekend.   I need to rest!   My book group last night switched the book we are reading for next month so I have to go to 1/2 price books and see if they have the book I want.   I maybe can do that tonight...we will see.  


    Supper is cooking and smells great!   I wanted to cook a nice home cooked meal for hubby since I have been gone so much this week.   I haven't cooked most of the week.   Just another way to honor my hubby........

    If you have a recipe requiring skinless chicken thighs.   Buy chicken thighs with skin on and peel it off yourself.  It is easier to do if chicken is partially frozen.   The cost savings today buy using this tip was over $4.00.  The chicken I bought at Sam's today was only $5.00.  The same amount of chicken, but skinless was over $9.00.


    Always make a menu and shopping list before you go shopping for your groceries.    

  • Home from Errands.......and did very well with the budget.  Gotta love that!


    Sam's Club -  I had budgeted 50.00 and only spent 49.10.    I am hoping this is the last box of pull-ups I have to buy...but I doubt it. 


    Groceries....I had budgeted 75.00 for the week and I only spent 42.10, so I did very well there!   


    I also stopped at the bread thrift store to buy some light bread and the post office to mail some letters.  Now I am going to put away the groeries and get going on laundry and cleaning!

  • Morning.....my weekend has  begun!!    YEAH!!    I do love having Friday's off that is for sure.   I think I am going to get groceries tomorrow instead of today since the house needs alot of attention.   What a mess!   And the laundry pile is huge!  


    It has been a busy week for me....Monday and Tuesday I worked late and came home and went right to bed.   Wednesday I cleaned Tommys room and did some laundry.   Last night I didn't get home from book group until 10:30 and went right to bed.    So I have alot to do today!   I plan on spending about 30 minutes in each room and get things in order.    I also need to make a grocery list and pay bills. 


    Tommy has preschool and then he will go to daycare so I can get things done around the house.  


    Supper tonight Roast Chicken, Mashed Potatoes and Green Beans.
