  • Saturday we got a late start to our morning, but headed out to the library.   My SIL was at the library so that was fun.   Then we went to Sam's to get laundry detergent.   We buy this huge bucket so I have to have hubby go with to lift it into the cart.   After Sam's we went to Rainbow to buy a few more hamburgers for the BBQ.   


    Hubby and the older boys cut down the huge willow tree in our backyard.  Amy and Josh's friend Charlie helped.   I read and ran up and down the stairs resetting the breaker since the chain saw would flip the breaker.   I sure got my exercise.   Around 5 our guests started arriving.   We have 7 people over for a BBQ and Josh had 3 friends over to watch movies.   The teenagers all went to the mall and they took Erik with them.  Erik was very happy about that.   He loves being with Josh and is sad when Josh has to work so much on the weekend.     Josh has worked all weekend, Fri, Sat and Sunday.   But he has been good about doing things with Erik when he is home. 


    We had great food.  The first BBQ of the season is always great.  We grilled out hamburgers, and hotdogs.   I made 7 layer salad, and fruit salad.   We played Phase 10 and Scene It until late!    Actually the party broke up around 11:00 which is really early for us. 


    Today is church this morning.  Home to make brunch and spending the day reading and doing laundry is my plan.   Well I suppose I should try and read a few blogs and then get ready for church.

    7 - LAYER SALAD


    1 head of lettuce, torn into pieces
     1/2 cup chopped celery
    1/2 cup chopped onion
    1/2 cup diced green pepper
    2 Tbsp sugar
    10 oz frozen peas, cooked slightly and drained
    1 pt Miracle Whip (spread to edges to seal)
    8 strips bacon cooked, drained and crumbled
    1/2 cup grated Cheddar cheese


    Layer in oblong dish in this order:  lettuce, celery, onion, green pepper, frozen peas, Miracle Whip, Sugar, Bacon and cheese; refrigerate until serving.  Can be make a day ahead. 


     


    SIMPLE CHICKEN STIR-FRY - (WISCONSINMOMOF2)


    1 pound skinless, boneless chicken breasts, cut into strips
    4 cups frozen stir-fry vegetables (without sauce)
    1 tsp minces garlic
    1/2 Cup chicken broth
    1/4 cup light teriyaki sauce
    Salt and Pepper to taste


    1.  Spray large nonstick skillet with nonstick spray; heat.  Add Chicken.  Cook over medium heat, stirring constatnly until browned.


    2.  Add vegetables, garlic, and stiry-fry until barely tender, about 2 to 3 munutes.


    3.  Add broth, teriyaki sauce, salt and pepper.  Stir-fry until chicken is cooked through and vegetables are tender-crisp, about 3 minutes longer.


    Serves 4:  Each serving: 179 calories, 3 grams of fat, 3 grams of fiber, 3 points.


    Sever over brown rice (points value per cup: 4 points)
     

  • Allergy Season has started....GRR....I have a terrible sinus headache.  I did manage to get most of the things I needed done today, but now I am going to take more sinus medicine and tylenol and go to sleep.  


    I got groceries and was here for the furnance repair guy.   He was nice and fixed our leak without charging us.   YEAH!   What a blessing considering things are very tight right now.  


    My budget this week for groceries was...75.00 and I spent 58.90 following my frugal menu mailer.  Not too bad considering I also bought stuff for a BBQ tomorrow for at least 10 people.  


    Well I am going to go lay down for a while. .   Hope everyone is having a great Friday!

  • Tommy didn't take a nap.  So we went downstairs and he played while I picked up a bit.   Then he decided he wanted to lay down and watch Dora so he is doing that now.  Tonight is chore night.    Josh jsut finished cleaning the bathrooms before going to work.   He works until 9 or 9:30 tonight.   So it looks like it will be hubby and I for supper tonight.  hmmm....maybe I should make something different.  He really likes stir fry so maybe that is what I will make.   Josh hates stir fry!


    Off to figure out supper and read for a bit!    Hubby will be home from work in an hour or so.  I think  I will try to get my chores done before then!    Later!

  • Hubby just called to check on the baby......Tommy is complaining of a tummy ache again after eating a bit of lunch.  He is laying down now.   I just smile to myself knowing how lucky I am to have such a dedicated and loving hubby.    He loves that baby so much. 

  • Tommy is still sleeping so I think I am going to crawl back into bed and read until he wakes up.   Have a great day!

  • Tommy still wasn't feel too well during the night so I think we are taking a  sick day today.   He even whimpered in his sleep alot.   So I think he tummy is really bothering him.  He is still sleeping so I think I will let him sleep in and hopefully he will be better tomorrow.   So it sounds like a snuggle and watch videos day.  

  • We got a surprise evening at home tonight.  We went to church to eat and after the meal Tommy started crying his tummy hurt.   We left and didn't even get out of the parking lot and he was asleep.   We brought him home and put him to bed.  I hope he will sleep through the night and not think this is a late nap!    Hubby is out working in the yard and I am going to straighten up a bit in the house and read for the rest of the evening.   Josh and Amy are at church teaching their classes.   So I think I will take advantage of the quiet!  I can't tell you how much I love the quiet!  We are truly blessed with a peaceful home.    

  • I just got a few things together for our Families First class tonight.  I copied a couple readings out of a book I bought at the Children's Mental Helath Conference.  It is called Raising Healthy Children Day by Day -366 Readings for Parents, Teachers, and Caregivers Birth to Age 5 by Jolene Roehlkepartain.   It is daily readings based on the Search Institutes 40 developmental assets all children need. 


    I also am going to share some information on Menu Planning - and savingdinner.com.


    I also picked up a catalog from the conferenec from Free Spirit Publishing that has great books related to many parenting and child rearing issues.    I have a few more books on order that I am waiting to come.   


    We also will be discussing Peaceful Parents, Peaceful Children, I think it is called.   I think that book was published by Free Spirit, at least it is in their catalog.   I haven't read much of this book yet, but look forward to the discussion.    Another parent is going to lead that discussion.  Hubby and I were not at the class last time since we went to the speaker on raising christian teens in a postmodern world.   

  • Morning....only need to work 8 hours today!  YEAH!  a short day!    We have church tonight so we will be eating there so no cooking either, also a good thing.  


    Colder weather is back again.  So no more capris and sandals for a while.   BOO HOO!   Back to pants, socks and a jacket!   


    Well I better get motivated here.  I need to fold  two loads of laundry before I get ready for work.   Have a great day!


    OH BTW, Tommy has been in underwear for three days now.   He has had about one accident a day.   Last night he told us a couple of times that he had to go potty and he actually had BM's on the toilet!   YEAH!!   Maybe soon I will be done buying diapers.   He is very proud of himself.
