  • It has been a very busy weekend!   I need a rest from my weekend.  YIKES!! 


    FRIDAY -


    I got groceries and ran all our errands.  My parents came into town for Josh's birthday.  I had to run to the Dr for my annual physical and then we picked up Tommy.   Friday evening I took my mom to Lakeshore Players, the local play house to see, "A Little Night Music".   At first I wasn't so sure about this musical, but it ended up being a lot of fun.  We didn't get home until about 11:00.   Way past my bedtime.   Tommy of course waited up for me....and we went to bed shortly after we got home.


    SATURDAY -


    Up early to make play-doh for church.   Then we went to church to Mommy and Me morning and to set up for the Ministry Fair.   It is always alot of fun being with my committee, they are a great group of ladies.   Then it was home to make some lunch.   They we had some more errands to run.  We had to pick up my bike from the shop and I had to take my truck in to get a new tired since I had a leak.  We also stopped at the library.   Tommy fell asleep a few times on the way and ended up not wanting to take a nap.  I tired to get him to take a nap a few times. 


    Then hubby went to pick up his brother and he joined us for supper.   After supper the rest of the family came over for a birthday party for Josh.  We played Scene It until Josh got home from work and then we had cake and did the party.  Everyone left around midnight so it was another late night.  


    SUNDAY -


    Up for church early since I had to man the booth for the ministry fair.   I was at church early and the rest of the family came later.   After church my parents took us all out to Old Country Buffet for lunch.   Amy came with us.   Then we came home for a bit and my parents headed back home to South Dakota.   Once they left Tommy and I took a nap for a few hours.  A much needed nap!   We have had a light supper and now I will spend the evening reading and doing some laundry.   Speaking of which I better get going with switching around the laundry.  


    Well someone is here to pick up Erik so I better get going.  Later!!!

  • I ran errands over my lunch break so that is one less thing to do tomorrow on my day off.   My hubby took the day off to spend with me tomorrow, so I wanted to have a bit less to do for the day.  Hopefully we will be able to go out for lunch or something.  My parents are coming I think to visit on Friday as well.   Tons to do!!!

  • Morning.....my last day of work for the week!  Yeah....I dislike those 12 hour days...but I sure love having most Fridays off.  I need to work 7 hours today and then go to the chiropractor.   Tonight is our cleaning night so the house will be all cleaned up for the weekend.   SO far this morning I have done one load of laundry, but now it is getting time to head to work. 


    This weekend should be fun....my parents are coming and we are celebrating Josh's birthday.  Last night Josh gave me my Mother's Day gift...a gift card for the movie theatre..so I think hubby and I will go to a movie and out to eat for our anniversary if Josh will babysit Tommy for us.   We are celebrating our 5th wedding anniversary.   Sure doesn't seem like we hve been married that long.    


    Time to fold my last load of clothes and get ready for work.  Tommy is still sleeping....tired little guy!


    SUPPER TONIGHT:


    Herb and Spinach Cakes
    Serves 6


     


    1 large onion, chopped


    1 tablespoon olive oil


    3 cloves garlic, pressed


    1 teaspoon rosemary, crumbled


    1/4 teaspoon nutmeg


    2 10-oz. packages frozen chopped spinach, thawed and drained


    4 medium russet potatoes, cooked, peeled and mashed


    3/4 cup bread crumbs, divided


    1/4 cup Romano cheese, grated


    Salt and pepper to taste


    2 eggs, separated


    1 tablespoon olive oil, divided


     


    In a skillet, heat olive oil over medium high heat. Add onion and garlic and saut? until tender.



    Add rosemary, nutmeg and spinach and cook another 2 minutes.


     


    Place spinach mixture in a large bowl, let cool slightly.

    Add mashed potatoes, 1/4 cup of the breadcrumbs, cheese, salt, pepper and egg whites. Stir well.


     


    Divide spinach mixture into 12 equal portions. Shape each portion into 3 1/2-inch cakes. Dredge cakes in remaining bread crumbs.


     


    Add 1 teaspoon olive oil to skillet over medium-high heat.


     


    Add 4 cakes to the skillet and cook for 6 minutes, or until lightly browned, turning carefully after 3 minutes.


     


    Repeat procedure with remaining oil and cakes.


     


    Per Serving: 210 Calories; 6g Fat; 10g Protein; 31g Carbohydrate; 5g Dietary Fiber; 67mg Cholesterol; 267mg Sodium. Exchanges: 1 1/2 Grain (Starch); 1/2 Lean Meat; 1 Vegetable; 1 Fat.



    SERVING SUGGESTIONS: A big green salad should do the trick.

  • The Quick Baked Cod was a hit!!  Hubby even liked it and said add it to our online cookbook.   WOO HOO!!   Off to do my chores....and get ready for bed.    Good Night!

  • Supper tonight.....hope it goes over ok...Hubby is not a fan of fish, except for orange rouge that I make.


    Quick Baked Cod
    Serves 6


    6 cod fillets, thawed, if frozen-OR use other available white fish
    Salt and pepper to taste
    3 large tomatoes, chopped
    2 tablespoons green onion, chopped
    3/4 teaspoon basil, crushed
    3/4 teaspoon oregano
    3 teaspoons butter
    1/2 cup shredded Monterey jack cheese
    3 tablespoons grated Parmesan cheese

    Preheat oven to 450 degrees.


     


    Cut cod into serving-size pieces; place in buttered baking dish. Sprinkle with salt and pepper. Combine tomato, onion and seasonings; spoon over cod.

    Dot with butter.


     


    Bake for 8 to 10 minutes, or until fish flakes easily when tested with a fork. Sprinkle with cheeses; bake again until cheeses are melted.


    Per serving: 251 Calories; 5g Fat; 45g Protein; 3g Carbohydrate; 1g Dietary Fiber; 110mg Cholesterol; 228mg Sodium. Exchanges: 0 Grain (Starch); 6 Lean Meat; 1/2 Vegetable; 1/2 Fat

  • My hubby doesn't normally like strata......but he loves this one!!  YUMMY!!!
    Cheese Strata


    Serves 6


     


    1/3 cup butter, softened


    1/2 teaspoon dry mustard


    1 clove garlic, pressed


    10 slices old bread (French is good)


    2 cups extra-sharp cheddar cheese, shredded


    2 tablespoons parsley, chopped


    2 tablespoons onion, chopped


    Salt and pepper to taste


    1/2 teaspoon Worcestershire sauce


    Dash of cayenne pepper


    4 eggs


    2 1/2 cups milk


     


    Preheat oven to 325 degrees.


     


    Mix butter, mustard and garlic. Spread evenly over each slice of bread.


     


    Cut each slice into thirds.


     


    Line bottom and sides of ungreased 8x8 baking dish with half the bread slices, buttered side down, cut to fit.


     


    Mix cheese, parsley, onion, salt and pepper, Worcestershire sauce, and cayenne pepper; spread evenly over the bread slices in the dish. Top with remaining bread slices, buttered side up.


     


    In a medium bowl, beat eggs and gradually add milk. Pour over bread.


     


    Cover and refrigerate at least 2 hours, or overnight.


     


    Bake, uncovered, about 1 hour and 15 minutes, or until a knife inserted in the center comes out clean. Let strata stand 10 minutes before cutting into it.


     


    Per serving: 473 Calories; 30g Fat; 23g Protein; 29g Carbohydrate; 4g Dietary Fiber; 197mg Cholesterol; 667mg Sodium. Exchanges: 1 1/2 Grain (Starch); 2 Lean Meat; 0 Vegetable; 1/2 Non-Fat Milk; 5 Fat; 0 Other Carbohydrates.



  • Today is my short day at work.....YEAH!  I only have to work 8 hours and come home.  Tonight for supper I am making cod.   I have a feeling I will be the only one eating.  I love fish, but the rest of the family doesn't so much.  It is a new recipe so I thought I would give it a try.   Not much going on....came home last night and went right to bed.  I was so tired.
