I have our lunch all ready for our picnic. Tommy missed his preschool picnic on Friday since he was sick so we are going today. I made wraps, bagged some grapes and snack mix. I had a few drink boxes downstairs too....so we are ready to go if Daddy ever gets home. I gave him the checkbook to go to officemax and of course he found some clearance items he wanted....ARGH....there is a reason he doesn't have the checkbook normally. It doesn't do my budget very good. I tried to talk him out of it....they had workbooks on sale and we have enough educational items for a lifetime....but he wants to really work with Erik this summer again. We will see....
Josh and Amy are at the Mission Trip car wash...and should be done soon.
Well I haven't accomplish as much as I would have liked today, but then I didn't plan on going to urgent care all afternoon either. Such is life.........
We won't be able to go to church tomorrow morning since Tommy is still contagious with the pink eye. So I hope to use the time wisely and get some things done tomorrow. I have been babysitting my nephew Nick all afternoon and evening. Once he is picked up we will all be going to bed. Hubby and I are going to call it an early night and watch a movie in bed. We have two movies from Netflix to watch. I think we are going to watch Anchorman. Josh and Amy went to the movie with a number of other kids. But they should be home pretty soon.
Tommy is been going around all night tonight telling us how he is going to sleep in his own bed tonight. When he was at Target with us today he say some candy, Bubble Tape to be exact and really wanted it. I told him if he sleeps in his bed tonight like a big boy we will go buy it tomorrow. So he is very excited. We will see how he does. It is up to him..... candy is a real treat in our house. I can't remember the last time I bought him candy at the store. We have a little bit left in a candy jar which is all the candy from Easter or something that no one wanted...LOL!!! It is all tootsie rolls, which no one likes.
It finally quit raining in MN...so I took advantage and went for a bike ride. I increased my ride to 4 miles tonight and did ok. I was a little out of breathe, but no asthma attack so that is good. But my legs are tired!!!! I also walked for 2 of my lunch breaks at work this week too. So I got in a fair amount of exercise im this week!
Well off to do my bedtime routine and sweep the kitchen floor. Have a great evening!!!!
Supper Tonight........was a hit......

Vermicelli Lo Mein
Serves 6
1 cup chicken broth, canned OR homemade
3 tablespoons low sodium soy sauce
1 tablespoon cornstarch
8 ounces Vermicelli pasta, uncooked
2 tablespoons olive oil
1/2 medium onion, chopped
2 cloves garlic, pressed
1 1/2 cups fresh broccoli florets
2 medium carrots, sliced
1 1/2 cups thinly sliced bok choy
1 1/2 cups sliced fresh mushrooms (about 4 oz.)
1 cup thinly sliced green bell pepper, de-ribbed and seeded
2 green onions, sliced
Sesame oil, (optional, but wonderful in this!)
Prepare pasta according to package directions; drain.
In a small bowl, combine broth, soy sauce and cornstarch; set aside.
Meanwhile, heat olive oil in a large skillet or wok over medium-high heat (but don't let it smoke). Add onion, broccoli and carrots; stir-fry for about 3 minutes. Add bok choy, mushrooms, bell pepper, onion and garlic; stir-fry 3 minutes, or until tender.
Stir cornstarch mixture into vegetables. Cook, stirring constantly, until mixture thickens. Remove from heat.
Add hot pasta; toss until well blended. Sprinkle with sesame oil and serve.
Per serving: 246 Calories; 6g Fat; 7g Protein; 44g Carbohydrate; 3g Dietary Fiber; trace Cholesterol; 598mg Sodium. Exchanges: 2 1/2 Grain (Starch); 1 1/2 Vegetable; 1 Fat. WW POINTS = 5
Well back from urgent care.....yep....Tommy has pink eye. She was surprised he could get it while he in on the Omnicef since it is a stronger antibiotic. So she gave him a stronger antibiotic for his eyes. Well.....we get to the phramacy and of course it isn't covered by our insurance. So we could go back to urgent care and ask for a different script or we could just pony up for the stronger antibiotics she scribed to him. Since we didn't want to spend our entire Saturday at Dr offices....we coughed up the money! So this little tiny, tiny, bottle of eye drops was $64.00! ARGH!! Hopefully we get rid of this bug Tommy has soon! He now has infected ear and eyes.....what else could happen????? Dare I say that out loud???? Now to get on with my day finally!
Well today isn't going like expected......even though I jsut took Tommy to the Dr yesterday, we need to go to urgent care today. He has pink eye now, which of course is contagious so I can't take him to daycare on Monday unless he has been treated. I hate going to Urgent care!!!! There goes my whole afternoon!
Hubby let me sleep in again this morning after being up with Tommy in the middle of the night the last few days. I slept in until 9:30....that felt good! My Tommy is such a stubborn little man. I made him sleep in his bed last night, since I jsut really needed some sleep. I told him if he slept in his bed he could have a sticker in the morning and when he earns two stickers we will go buy a candy at the store. After much upset he did fall asleep in his bed until sometime in the middle of the night he snuck into bed to curl up by momma. In the morning he said "I don't get a sticker and I don't care, I want to sleep with momma". Hmm........I really wouldn't mind him sleeping with us, but he hits me in the face numerous times while I am sleeping and I just don't get any sleep. If he would lay still....we would all be fine. I think we will try it again tonight....at least if he sleeps in his bed for part of the night we get some sleep uninterrupted. It is so hard for me to listen to him cry though.
Oh..Lori - Yo-J Popsicles are simply homemade popsicles we make with those popsicle molds you can buy at Target. We invested in a couple of set of them. We just pour the yogurt drink (yo-J) in them and freeze. I also make them with pudding, fruit slush and 100% fruit juice. It is a nice summer treat.

Tonight Tommy and I made Yo-J popsicles and Teddy Bear Snack Mix - Tommy is having a hard time waiting for the popsicle.
TEDDY BEAR SNACK MIX
2 cups instant ramen noodles, coarsely crushed
5 Cups Golden Graham's Cereal
3 Cups Teddy Graham cookies
1 Cup sliced Almonds or unsalted peanuts
1 Cup Raisins
1/2 t. Ground cinnamon
1/3 cup butter, sofened
1/3 cup Honey
1 teaspoon orange juice or water
Preheat over to 375 degrees. Remove seasoning packet from package of ramen noodles and either discard or save for another use. In a large bowl, combine cereal, cookies, noodles, nuts and raisins. In a small pan, combine cinnamon, butter, honey, and juice or water. Stir over low heat until melted and well mixed. Pour butter mixture over the snack mixture and toss gently until evening coated. Spead each single recipe on a large rimmed baking sheet and heat in the over for 10 minutes. Remove from the oven and cool to room temperature.
Freezing Directions - place cooled snakc mix in a large freezer bag or container, or package in individual servings portions. Remove excess air, Seal, Label and freeze.
Thaw and enjoy!!
Never an uneventful day in our lives! Last night Tommy cried from 10 until after midnight. He kept saying his ear hurt. I gave him tylenol and some allergy meds. I laid in his bed with him for a couple of hours until the meds seemed to help. I didn't think he could have an ear infection since he jsut finished his antibiotics yesterday. I was almost ready to get dressed and take him to the ER when he finally settled down. Well we took Tommy to the Dr this morning and he has an ear infection in the other ear. The Dr put him on a stronger med, since this bug was immune to ammoxicillian. We need to take him back to the Dr in three weeks and to have them rechecked and he needs to have an hearing test. The Dr felt his hearing might be a problem due to the fluid. We will see in three weeks.
After the Dr Tommy went to his aunties and hubby and I ran errands. We hit Aldi, Rainbow, Sam's and the Bread Thrift Store. Now I just need to pick up the house a bit and make supper.
We don't have much planned for the weekend. Tommy wants to make popsicles and stuff. I hope to make some food to freeze and I promised Tommy we would go on a picnic on Sunday since he couldn't go to his preschool one this mornings since he had to go to the Dr.
