  • Monday....GRRRR.....enough said.    I only got a few hours of sleep last night so this is going to be a hard day!  Definitely a more than one can of Dew day!  


    TODAY - weight watchers went ok.   I didn't gain, but I didn't lose either.   I really need to find some motivation here.   This week I hope to write down what I eat much better.   Today so far I have eaten 9 points worth of food.   So far so good.....


    Not much planned for today...just work, which I better get back to.  Later!

  • The Chicken Enchiladas were a hit here!  Erik loved them and actually took seconds.  This is rare for him.   After supper we quickly got the house in order.  We set the timer for 15 minutes and tackeled each room for 15 minutes.   Both hubby and Erik helped.      Now 45 minutes later the house is all straightened up and the clean clothes are put away.    AAAAh....what a nice way to start the new week.    Josh went to Amy's for supper after work.   He should be home in a bit.


    I have a couple of piles of paper to tame, than give Tommy a bath and head to bed.  Good Night all!!   Have a great week!

  • I feel like I have just been posting and not having enough time to keep up with everyone!    I really appreciate all of you guys and you motivate me so much to strive to do better.   I love sharing recipes with you all and hope you enjoy them.   It is great to find like minded people to share your interests with.    Your friendships and comments mean alot to me.  Thanks for everything!!


    BAS2SB - I haven't posted the Children Enchiladas recipe as I am trying it for the first time tonight.   But here it is if you want to try it.  I have mine in the oven right now!


    Chicken Enchiladas



    • 2 cups shredded or chopped cooked chicken (from freezer* or buy a hen and boil it)
    • 1 can cream of chicken soup
    • 1 can chicken broth
    • 8 oz. sour cream
    • 1 onions, sauteed (from freezer)
    • 1 bell pepper, chopped & sauteed
    • cilantro
    • cumin
    • Adobo or garlic salt
    • 6 whole wheat flour tortillas (if you can't find them, get regular ones)
    • 2 cups Mexican blend cheese

    Combine soup, 3/4 can chicken broth, and sour cream. Set aside 1 cup of this mixture. To the remaining mixture, add chicken, onion, pepper, and spices to taste. Add 1 cup of the cheese.


    Place 2-3 T. of mixture onto each tortilla, roll up, and place the tortillas in a 9x12 pan. Add the remaining chicken broth to the reserved soup mixture and pour over enchiladas. Sprinkle remaining cheese over enchiladas. Cook at 350° until bubbly.


    WIsconsinMom - I haven't tried Lands End Jeans...but I think they sell them at Sears so I will have to try them.   I went shopping today looking for pants for work.  I only found one pair.  I HATE SHOPPING FOR MYSELF!!!


    Crazymomma -  I really like Liz Claiborne jeans too!   I am going to stop at the outlet mall in December on my way home from Duluth to see what I can find.   I have a hard time finding jeans I like.  I am very picky.  I am also between sizes.  10's are a bit loose and with my weight loss I hate to buy more in that size.  But then 8's are too tight for my comfort.  ARGH!!    How did you like the Chocolate Chip Pumpkin Muffins???   


    myjourneywithHim - Thanks for visiting my site.   Good luck with following the weight watcher points.  Just take babysteps....keep going in the right direction.   Thanks for all your encouragement.  I am glad I can help others.   But trust me I have many areas that I could do better, but the one thing I strive for in life is to be a good mom and wife.  That is what is important to me.  


    Writermom - I hope online WW is working well for you!   I am doing the flexpoints program but have lost some motivation lately.  I working on getting back on program.

    We will be leaving for church in a bit here.   Then I hope to get caught up with laundry and straighten up a bit around the house.   I need to actually do some work, work on my laptop before going into the office on Monday.   I am not very motivated to work from home.   So not much planned for today luckily, laundry and working.


    I hope to get a bit of reading in as well.

  • Evening....hope everyone had a great day!   Finally have some quiet time so I thought I would check up with everyone. 


    YESTERDAY


    I worked a little later than planned yesterday.   On the way home I stopped and got some groceries.  I only spent $60.00 so that was great as my budget was $75.00.   I even picked up a few extra things, like pop for me on sale, some weight watchers meals for work and 4 boxes of cereal for $10.00.   So that was pretty good.   Then I came home and put everything away and got supper (breaded Pork Chops, Veggie and Home Fries)  ready.  Hubby spent a lot of the evening doing homework with Erik.  Josh, Amy, and friends went to the homecoming football game.  Josh also took his cousin Chelsea, which was very nice of him.  After the game a ton of kids came over for a bonfire.    I went to bed, but they all left around 1:00am.   It is so nice to know I can trust Josh.  I checked on them a couple of times, then went to sleep. 


    TODAY


    Woke up later than planned.  Hubby didn't have the truck remotely ready to go to the owner to owner car lot.  I doubt it will sell for what we are asking.   If we don't get any offers we will just keep it until it is paid off.  My hubby will drive it to and from work.   I will just drive the van (ICK)!!


    After dropping off the truck we went to the library to pick up books and things.  Then we went to Target to find Erik some brown church shoes.  We always make sure the boys have brown and black dress shoes for church.   We didn't find any there, but found a good price cut on a high back booster seat for Tommy.   His current car seat in the van was too small for him.  


    We then went to the mall to Payless and found Erik some shoes.   We were all starving by this time so we headed home and had quesadillas for lunch.   After lunch it was nap time!


    I was going to go out with my SILS, but sadly my BIL's father passed away this morning.  So I have been watching my niece Kristen all day so her parents can have some time without her.   It was very unexpected.  He was at his cabin and came in from mowing the lawn and collapsed just this morning.   So very sad! 


    After Tom's nap I took Tom and Kristen to the park to play.  Then it was home for supper.   Since then we have played play-dough and now they are playing on the computer.  


    Erik is reading, since he is grounded.  Hubby is napping on the couch and Josh is at the homecoming dance.   It is a very quiet evening here at our home.  Hubby got me some Smirnoff Twisted...YUMMY...thanks for the idea KELIOS!!


    I think I should get Kristen and Tommy into PJ's and we will watch a video or something. 


    SUPPER - We had Sloppy Joes, Baked Beans, Cole Slaw and Mac and Cheese. 


    TOMORROW - Chores around the house - Church and Laundry!

  • Morning...It is Friday YEAH!!!    I am soooo happy for it to be the last day of work.  Though I will have to work a bit over the weekend.  


    YESTERDAY


    I didn't get much work done.  I had a lot of running around to do.   I took and picked up Tommy from preschool.  While he was at preschool I paid bills/budget and made my menu and shopping list.   Once I picked up Tom and took him to daycare, I had to pick up Erik at school for his Dr appointment.   They increased his meds, but that won't take place for a few weeks since we have meds on hand.  


    I took Josh and Erik to get haircuts.  Josh has a job interview on Friday so needed a trim.   He is applying at the Limited and might work there and at Old Navy, since Old Navy doesn't give him hardly any hours he needs to work at two places.    


    Then Erik got in huge trouble with hubby about homework.   I just quietly stood by and made supper.   YIKES!   So Erik is grounded by his father.   I try to stay out of these things.  This is a huge bummer for Erik since it is homecoming tonight and he won't be able to go to the game with Josh.  Josh is taking our niece Chelsea though.   She is the same age as Erik.  


    Tommy worked on letters last night and we added 6 new letters last night.  He already knows them all!   I think we will be done with learning the letters names before Thanksgiving.    I also printed out some cutting templates and worked on cutting with Tommy.   I think his fine motor skills need work, so we will be working on writing and cutting as well.   I found out at preschool Tommy is working on the computer on Kindergarten games....so we will probably add Kindergarten games to his computer.  I didn't think he was ready for kindergarten stuff, but the preschool teacher said he is.   Which of course has me more concerned since he has another year of preschool after this year before he can start Kindergarten.   We are still leaning towards private school for Kindergarten so he can have full day kindergarten.   We only want what is best for him!  I don't think you can ever do too much early education!   This early investment always pays off!   It sure did with Josh. 


    TODAY -


    Busy working at the office.  Waiting for Social Security to call me for a phone interview .  After that I will try to get groceries before heading home.  It might be a late supper tonight.   ARGH!!


    I purchased a surprise for my hubby today.   How we work money around our house is each of us (hubby and I ) get between 50 and 75 dollars a week that is our to spend as you care to.   I buy clothes, books, diet Mt Dew (my vice) and pay my weekly weight watchers.   Hubby uses his for eating lunch out at work, cigs and beer.  His vices!  LOL!!   I generally do not spend my money each week as I  am NOT a shopper.  So today I bought through my work two tickets to Mannheim Steamroller Christmas Concert with my money from last week.   So hubby and I have a date to look forward to and it is even on a low kid weekend!   So I just have a to find a sitter for Tommy.    But now I have to save up my fun money for a few weeks as I need new pants for work and I would like to buy a new pair of boots.   This system has worked very well for us as the other person can't complain how the other spends their fun money.   But you don't get any extra...when it is gone...it is gone!   Hubby frequently runs out...LOL!!

    WEEKEND -


    This morning I didn't have any plans for the weekend, but now things are popping up.   Hubby wants to take my truck to the owner  to owner car lot to sell on Saturday.   So we will have to be available for test drives all Saturday.  This morning my SIL asked if I wanted to go out this weekend and I jumped at that!  We are going to the movie and having drinks and appetizers somewhere!  YEAH!!   And Sunday we have church and Sunday School.  Hubby and maybe Josh might got to the church Saturday morning and help install the new playground for the school.

  • MORNING......


    TUESDAY - the trip to Duluth was long.  It was downpour of rain all the way there and back.  I didn't stop at the outlet mall since it was raining so hard and I didn't want to drive in the dark with all the rain.    I am going to Duluth again in December so I will try and stop then.   I have to go another time Jan. 3rd.   I do not enjoy the trips up there....ARGH...but I did finish a book on tape!

    YESTERDAY -


    Erik was suppose to stay after for extra help at school. He didn't, not sure what happened I am waiting to hear from the teacher.   We had to run back to the school to get homework and were late for church.   Mom and Dad not happy campers.  


    We started out first official Alpha class.   It was ok.   We had small group and we have a nice small group.   Our neighbor said a very nice thing about why he and his family started coming to our church.  They felt Josh was such a good example, attending church, etc that they wanted their children to be a part of the program at our church.   They are very nice family!   It will be nice being in the small group with them. 


    Then we came home and Erik had homework to do.  He had three assignments, but the one took him over an hour.   So he only got one done so far. 


    Tommy worked on his letters before bed and got them all right!  Yeah Tommy...we will be adding more letters soon.  He knows them all the way up to J.   He asks to do his letters all the time. 


    Josh has a job interview on Friday at Limited.   He is also having a bonfire after the homecoming game with his friends here at the house. 


    TODAY - I am working from home.  I have alot of running to do in between working.  Tommy goes to preschool this morning.  I will also pick him up from preschool since I am home.  Then I have to get Erik from school as he has a Dr. appointment.   Another Busy, busy day....


    Yesterday I could really feel my stress level increase at work.  The workload is getting very heavy right now and will be crazy until the end of the year.   I hope to stay healthy through out this busy season.  I was really sick the last two years.   Stress does that to me.  I think I will probably be doing some work over the weekend this week.   I can't fall behind right now.  


    A social worker resigned at work yesterday.  I am glad it wasn't in our unit as I would not want to have to absorb some ones caseload. 


    Erik was up this morning and his dad had him working on some more homework before school.  He got one more assignment done.   Now he only has one to do for Language Arts that is due today. 


    SUPPER:  Easy Cheeseburger Pie/ Salad


    TOMORROW:   I am working from the office tomorrow.  I will hopefully pick up groceries on the way home from work.   I have two more home visits on Friday to write budgets.  So I will have plenty to work on over the weekend.   Luckily the book for book group in October is very short!    I am still working on finishing East of Eden, but have a ways to go.   This week is sure flying by!    As a matter of fact...the entire month of September flew by!!!  I can't believe it is October already!  


    WEEKEND:   If I can get things done I hope to put my truck op for sale at the Owner to Owner car lot this weekend.  I did find a car at the Honda dealership I want to test drive.  I would like to try the Honda Civic and see what I think.  It gets over 30 MPG.   


    Hope everyone is having a great week!   I am off to get a few things done before I have to pick Tommy up from preschool.  

  • Tommy's field trip was canceled.   bummer....due to lightning.  I am going to run a couple of errands (title transfer for Josh's car and CVS) and then head to Duluth.  I should get up there early enough that I can find a restaurant to have lunch and read for a bit until my meeting.   On the way home I will have to stop at the outlet mall and buy another pair of Liz Clairborne jeans.  I wear the black ones to work.   The ones I bought last year are faded funny.   If these ones do the same thing I am done buying this brand of jeans.  Hope everyone has a great day!
