  • Friday Night Foods....

    Turkey and Cheese Rolls

    • 2 cans low-fat crescent rolls
    • 1/2 lb. thinly sliced turkey (or other meat of your choice)
    • 8 slices American cheese (or other cheese of your choice)


    Open and unroll crescent rolls but do not separate. Leaving pairs of triangles together so that you have 4 rectangles from each can, separate rolls. Place a slice of cheese (or sprinkle grated cheese) on each roll. Place 2 slices of meat on top of cheese. Roll up each rectangle starting with the short end. Bake at 375° for 10-12 minutes or until rolls are lightly browned.

  • Good Night all....Hope you all had a good night.   Tommy and I went into my work for a few hours.  I got a few things done.  I won't be going into the office on Monday due to the companies coming to do estimates for us.   We were talking today and are considering two more remodel things we have been putting off, but desparately need done.   I have so much fear with spending too much!  I am very conservative.  So stay tuned...we will probably come to a decision sometime in March or at least start getting estimates.

  • **GOOD MORNING**

    How is everyone this morning??  I am up, showered and dressed.  I am hoping to go to get groceries.   I am still working on cleaning out our freezer.   I am going to plan my meals around what is down there.  

    Yesterday - I took care of getting everything all set up for my vacation.  You will not believe the excitement we having going on!   HA HA.   The fun starts on Monday.  I am actually needing to work from home on Monday as two companies are coming to the house to give us an estimate on adding insulation to our attic.   It has been a mild winter so far, but this is way over due!   They might have to do a few things to the attic to make it up to code, but hopefully that was all done when we had our roof reshingled. 

    Since I am working from home on Monday and I know I won't get 8 hours in.   I am going to go into work for a few hours on Sunday.   I am getting this cold and it is really making my asthma flair up.  ARGH!!  So I am using the nebulizer and hope to get this under control. 

    Then the following week I am on vacation and the fun begins!   On the 15th, I actually have nothing planned.  On Tuesday I have to have a Dexa Scan in the morning and see the opthalmalogist to monitor my eye pressure.  So that will all take place in the morning.   In the afternoon we are having a plumber coming over to put new faucets in the upstairs shower/tub.   We have been down to only one shower since the hot water faucet broke off in there.   We also have a couple of small leaks he will be taking care of.  Our house is old and things are still the original so it is starting to need repairs.   What a fun day!!!!

    Wednesday I am taking my FIL to take care of some legal things.  He doesn't really drive in the city much anymore.   In the evening I am finally back at bible Study!   I really have missed going. 

    Thursday -  My Birthday!!   I only have one plan on my birthday, a company will be coming in the early morning to clean the ducts and furnance.  Since both Josh and I have allergies we should have this done every year, but it has been a few years since it was done.  You smell dust when the furnance turns on.  

    Friday - is my day.  I will drop Tom off at preschool and do whatever I want all day!  WOO HOO. Unless of course the company we select to do the attic is able to do it this day!!

    So this is not really a vacation but it feels great to get these things done!   They have needed to be done for a while, but we get busy and don't take time off of work to handle these things.  I am taking another week off in February and hopefully I have nothing planned but to relax, etc. 

    I am off to finish my menu planning and get groceries...I have no idea what I want to fix....hmmmmm

  • BUDGETING 101 - PART #1

    At the beginning of each year, I look at our budget and how we managed financially and what area we could improve.  This year has gone pretty good for the most part. 

    The number one thing to remember is to FACE (Financial Awareness Continuously Empowers) your financial situation straight on.  You need to get a clear picture of what you owe and come up with a plan to pay it off.

    So with the new year upon us, I challenge each of you to get off on the right foot financially.  The first thing you need to do is locate all your bills and put them together.  You need to find a place that will be where bills are always put until they can be paid.  You should not have to search the house for your bills before sitting down and paying bills.   That will just lead to late bills and stress. 

    If I get the mail in I look through the mail immediately and throw away the junk and envelopes.  Get rid off that clutter!!  I than put ever bill in the secretary in the dining room.  I am buying a file cabinet for the dining room so I will be able to immediately file any other important papers that come in the mail.  Every piece of mail is really just a decision to be made.  If you delay the decision you simply add work and clutter to your lives!  I am currently making my way through many delayed decisions and it is overwhelming.

    Another helpful things is to have a certainly day during the week that is designated paperwork/bill night.   For our household I take care of bills on Thursday nights or Friday mornings.   This gives us a good idea of money available for the weekend, etc.    We receive a paycheck each week and pay bills and review our budget weekly.

    The next crucial tool for us is our bill paying binder.   I have a three-ring binder which has dividers for each month.  Behind each month divider is my bill sheet for the month.      I also keep preprinted address labels and stamps in this binder.  Everything I need to pay bills is in one place.  In the past I have been in the ICU and a car accident and couldn't take care of the bills, etc.    During both of those times my hubby was able to look at our bill paying binder and pick up right where I left off.  Due to my organization and his involvement in our paying bills he could easily take over for me. This is always where having a household management binder is very helpful.  If I am unable to care for my family, they need to be able to find all the info quickly!   We really found this to be a problem when my MIL broke her hip and we had to try and take over their finances.  We had to search for many things. 

    Our #1 goal is to be debt free before retirement.   I actually hope to have this within the next 10 years, God willing.  I have seen what having credit card debt has done to people in the later years of their lives.  My ex MIL passed away and her husband was left with alot of bills he had to take care of.  My in-lawys struggle monthly to pay their bills.  I want to live a comfortable life in my later years!  I vow to live within my means now to have that in the future!!  You really have to make that your motto, live within your means!!  If you use a credit card and don't pay it off at the end of the month, you are not living within your means.  We have a number of credit cards and are working hard to paying them off.  

    We are using a the snowball technique to pay off our debts.  We took each of our credit cards and listed them from least amount owed to the largest.  We then looked at the minimum payment at that time.  We pay that minimum payment on all the credit cards, except for the smallest one.  We add an extra $100 to that bill each month.  Even if our minimum payment on the other larger cards decrease we continue to pay the same consistent amount each month.   Next month we will have our smallest card paid off.  We will then take the minimum payment for that card and the extra $100 a month and add it to the minimum payment on the next credit card minimum payment.   I hope that makes sense.  We always pay the same amount each month towards paying off this debt, even if our minimums are decreased.   This saves you a lot of money on interest.  So start rolling that snowball!!!! 

    That is all I have time for today.  My challenge today is for you to get yourself organized and find your bills.  It is time to face your debt so make a list of your debts so you can start getting control of it!  Let us know how you do!!

    I am back from getting groceries.   Today is not turning out how it was suppose to at all.   Hubby and I were gonna go see Erik, but now I won't be able to go.  Tommy seems to have pink eye and is contagious of course.  So I won't be going to the New Years party either.  My headache is just starting to hurt again so I will try and take some more tylenol.   Thanks for all the comments.  I think it might be migraines as well.  I was in a car accident 3 years ago where I rolled my SUV and have gotten headaches ever since.  

    Today I hope to work on taming the paper tiger in my dining room.  I have a ton of stuff to get organized and filed. 

    I did go to Aldi and  bought groceries for the week.  I bought a few special treats for tonight since we will now be staying home.  I also got the stuff for the food we were taking to the neighbors.  Hubby is going to take the stuff over there and visit for a bit while I stay with Tommy.

    OUR WEEKLY MENU

    MONDAY - Mexican Meatball Soup (crockpot 5 to 7 hrs) and Cornbread     ** GOOD, A Keeper!** 

    TUESDAY - Panko Chicken, Salad, Veggie and Fruit  **Family Fav**

    WEDNESDAY - Hamburgers, Cole Slaw and Fries ** Premade and Frozen Hamburger**  Wish I could find recipe **FOUND IT!!**

    Hamburger Patties

    Using raw meat, I added some onion powder, garlic powder and some seasoning salt, or sometimes I put in a half packet of onion soup mix for each pound of hamburger. I use rubber gloves to handle the hamburger (I hate trying to get that stuff off of my hands!) Anyhow, I made about 40 patties from six pounds of hamburger. I stacked them between waxed paper and froze on a cookie sheet. After freezing, put in a Ziploc bag.

    THURSDAY - Mother's Ham Casserole (from my new TOH cookbook for Josh) - I had to work late so didn't make - Josh made frozen Pizza.

    FRIDAY - Meat & Cheese Tray to Make your own Sandwich/ Chips and Dip - This worked great for movie night!!

    SATURDAY - Versatile Slow Cooker Chili (Crockpot 6 hrs) from the cookbook hubby got me for Christmas!

  • To Everything There is a Season

    I am hoping starting tomorrow things will be closer to normal and back to routine.   Last night my SIL called to remind us that her daycare was closed today.  ARGH...I forgot about that and had planned on being at work today.  I remember her telling me about this, but I jsut forgot to write it down.  So I was home with Tommy today.   We just stayed around home and did laundry.  I am the closest I have been to caught up with laundry in a long time....

    I worked on going through some more paperwork.   I went through the secretary and have another bag of burn stuff.   I am sorting everything to go into binders.   I have a household binder, cooking binder, Erik, Josh, Tommy and a binder for my MIL's paperwork.  I also ordered a filing cabinet to put in the dining room so we will actually have a place to put files.  That I am sure will help alot with the paper piles!   Actually the dining room table cleared!!

    I have to share a funny thing.  In purchasing a few new things for my kitchen I also bought a bowl that matches my canisters.  I am using it as a fruit bowl.   I can't believe how much fruit the kids are eating since it is out and on the counter.   I wish I would have done that ages ago!!

    I finished another book last night....
