Recipe to try......
Tex-Mex Meatball Subs 1-1/2 lbs. ground beef
1 egg, beaten
1 c. tortilla chips, crushed
16-oz. jar salsa, divided26-oz. jar spaghetti sauce
8 hoagie or sub buns, split
1 c. shredded Monterey Jack cheese
Optional: jalapeño peppersMix together ground beef, egg, chips and one cup salsa. Form mixture into one-inch balls; place in an ungreased 13"x9" baking pan. Bake at 375 degrees for 45 minutes; remove from oven and drain. Combine spaghetti sauce and remaining salsa in a saucepan; heat through and pour over meatballs. Spoon meatballs onto buns and top with cheese. Garnish with jalapeño peppers, if desired. Makes 8 subs
