    Country Ribs (crockpot)  - Mac and Cheese

    The ribs are very easy to do-- just place boneless country spare ribs in the crockpot with salt and pepper (no liquid) and cook on low all day. Then, about an hour before you want to eat, drain all the fat and liquid out of the crockpot, and add in your favorite BBQ sauce. (We like a store brand thick and spicy sauce.) Simmer another hour on low, then enjoy!

  • Windy820 asked for my salsa recipe.  My recipe is a combination of a couple of diffferent recipes to make a more kid friendly salsa.  So it is not a real hot salsa, but you could add more jalepenos to give it more of a kick!

    The original recipe I use is from the website, Pick Your Own.  I will let you know the changes we made to the recipe.   We did not can the salsa this time.  I have in the past, but this time I looked for a recipe for freezer salsa.   It does have to cook longer to ensure that it is free of bacteria and stuff.   I use a homemade seasoning for our salsa and not the bagged stuff.   I used the baggeds stuff last year and it wasn't as good.

    I like my custom-made from fresh seasonings better, so here is the recipe for that from the  Pick Your Own website that we used, plus our slight alterations.    We use an electric chopper (food processor) to dice the seasonings fairly fine, about 1/8 inch cubes.

    3 cups chopped onions (hubby says add a bit more)

    1 Tablespoons of oregano

    2 cloves of garlic, minced

    1 cup diced assorted mild peppers (red, yellow, orange, banana, whatever you have)

    1/4 cup diced, fresh cilantro (we only added 2 TBS)

    1/2 teaspoon black pepper

    1/4 cup diced celery

    1 to 4 diced jalapeño peppers - We only use two because we like it mild.(Kid Friendly)

    1 tablespoon salt (optional - I don't put any in!)

    3 (6 oz) cans of tomato paste - if you like a richer thicker flavor and texture

    1 cup 5% apple cider vinegar  (or 2 cups of lemon juice)

    Optional: 1 Tablespoon ground cumin

    Put this all seasoning together with 20 pounds prepared tomaotes.  The tomatoes must be have the skins, seeds and juice removed.   The Pick Your Own website describes the preparation of the tomoatoes well.   Since we froze the salsa, we had to cook it for at least 45 minutes to kill all bacteria, etc. 

    Bring everything (diced tomaotes and seasoning) to a boil, stirring occasionally until thickened, about 45 minutes. Cool to room temperature before packing into zip-top freezer bags.

    Notes: Measure a cup or two of the salsa into re-sealable plastic bags, gently press flat, then freeze for easy and swift defrosting.

    I really need to get busy and work some more on laundry and getting the kitchen cleaned up!!  Hope you are all having a great weekend!  

  • I am off to a bit of a slow start today.  We are on our way to pick up a few things from Walmart then I have to clean the kitchen and do laundry the rest of the day.  

    Yesterday..... we spent doing garden things all day.   I froze two meals of broccoli, 4 meals of green beans and made about 28 to 30 cups of salsa.  The Salsa took a very long time as I didn't have enough Roma tomatoes to make the 20 pounds needed for our salsa recipe.   I had to peel cherry and grape tomatoes to make up the rest.  That took a LONG time, but at least I used up the tomatoes we had vs. let them go bad. 

    Today, I will grate up the zucchini to freeze. 

    Lat night I made Swiss Chicken with corn on the cob from our garden.  It was very good!!

    Swiss Chicken

    4 boneless, skinless chicken breasts
    4 slices of Swiss Cheese
    1 can of cream of chicken soup
    1/4 cup dry white wine
    1/2Cup herb-seasoned stuffing
    1/4 cup butter, melted

    Arrange chicken in greased 9 x 13 inch pan.  top with Cheese slices.  Combine soup and wine and stir well.  Spoon evenly over chicken and sprinkle with stuffing mix.  Drizzle butter over crumbs.  Baked uncovered at 350 for 45 to 55 minutes.   Very Easy and Good!!! 

  • OH What a Week....

    It is Friday....my first family movie night/family night without Josh.  I have texted him to see what he is up to, but didn't hear from him.  It sure is hard for this momma to let her son grow up and be on his own.   I miss him already.  

    Has been a very busy week at work.   Today I hoped to only work a few hours, but had to kids in crisis so I ended up working all day.   Luckily I had made my menu and shopping last night.   I went grocery shopping after work.  It feels good have that out of the way before the weekend really starts.

    Total Spent - 181.64

    I don't plan on getting groceries again until September 14th.  So this needs to last for 3 weeks, therefore I averaged $60.00 a week to feed our family.  Pretty good.  I was surprised how much some things have increased in cost.  SHredded Cheese is more expensive by almost $1.00 per pack.  ARGH!  We eat alot of cheese.  Once school starts I should be able to decrease my average as well since I will no longer need to buy convenience foods for Erik to make for lunch at home.   Tommy has decided to take cold lunch to school each day.   I am glad as I am really not that impressed with the school lunch menu.   It will also save us over $50.00 a month. 

    My weekend is going to be pretty busy.  Many things in our garden is ready to be harvested this weekend.   I plan on freezing more green beans, broccoli and zucchini.   I also plan on canning some salsa if I have enough tomatoes to do that.   So that should take up most of Saturday I bet.  

    We probably have a funeral to attend on Monday or Tuesday.   Our neighbor down the street passed away the other day.  She was diagnosed with cancer about one month ago.   It was very quick and she wasn't really sick for long.   I hope her hubby will do ok.  They were a close couple.  We saw them going on walks together at least twice each day.  

    I have the groceries put away, but I should cut up fruit and things for the upcoming week.  But I think I am going to head to bed to read and relax.  Good Night!!!

    Sunday Baby Back Ribs - Macaroni Salad - Vegetable

    Macaroni Salad -(no real recipe - I just throw it together)

    2 cups Elbow Macaroni, cooked
    Thawed Peas to your liking
    1/2 cup or so Cheddar Cheese Cubed
    1/2 cup chopped celery
    1 small onion, chopped
    1/2 cup mayo (approximately)

    Combine the first 5 ingredients into a large bowl.  Stir in enough mayo to coat.  Add salt and pepper to taste.  Cover and chill until ready to serve.

  • Good Morning.... I am stil struggling to do my evening and morning Routine.  The rest of the month of August will be focusing on getting back to doing my routines!!   One of my main problems is I am not getting up early enough.  Argh....I really need to work on that!

  • The Boy Has Move Out On His Own....

    We are home from vacation. Vacation went ok.   It was hard to come home to a empty bedroom, which once was the home to my oldest son.  We did go over to Josh's new place to check it out.  It is very nice.  I hope it all works out for him.  I am taking him shopping tonight for some things for his new place. 

    Below is a tour of Josh's new place! 

  • We went to IKEA this afternoon and bought a ton of stuff.  YIKES!!!   We took the extra Billy shelf we had and put it into Erik's room.  He really needed some storage.   He did pretty good about going through things and throwing stuff out.   He went through his clothes and we took a garbage bag full out.   I will take it to the group home for the boys there.   We bought Erik a night stand, a lamp and boxes for on his shelves as well.   His room is pretty organized and ready for school to start.  I do want to buy him a bulletin board for above his desk yet.   

    We put the extensions to Tommy's Billy shelves on as well as his new blinds.   I worked on putting a few more things away in his room.   I still have a pile to go through in front of the closet and the entire closet.  I am afraid to even open the closet!!  

    While at IKEA we bought a new bed for Josh to take with him to his new place.  We also bought a desk and cabinet for hubby that will go in the new office he will have in Josh's old room.  Josh and I snuck to a store  get hubby another surprise.  (can't elaborate as he might read this!!)     He gave up his office so we could have a bedroom for Erik.  He wasn't too happy about that, but it really needed to be done.  So I am happy to be able to give hubby back his office.   I think he will be very happy.
