  • Getting on track in the new year.....

    It is hard to believe that 2010 is nearly over.   I think the years go by faster and faster as I get older.   Which comes to my next thought.....as we leave 2010 behind, I will also be leaving my 30's behind.  I am not sure how I feel about turning 40.  Somedays....it really doesn't seem possible that I could be that old.  I certainly don't feel 40, but then again what does 40 feel like?

    As many of you may have heard about, hubby and I started and completed Financial Peace University at our church.  We sort of took the class on a whim, but found it to be very needed.  It is wonderful to be on the same page financially with my hubby.  We are working hard to make progress, though we did slack off a bit in December with the holidays.  Now it is time to get intense again!  I am excited to see the progress me make in 2011.   If you have not heard of this class.....check out Dave Ramsey's website or radio show.  I am sure my family is tired of hearing on Dave Ramsey!   Either way we have once again celebrated Christmas without putting anything on a credit card.  With that said, we have not used a Credit Card in over 6 months.  

    But I will say we were over budget with Christmas so it is a little tight still so shopping today was interesting.  I had to add some of my fun money to the mix to complete our errands.   But we do have groceries for the next two weeks.   So that is good!

    Total - 183.66 (16 days of menu)  - $11.47/day or $80.35 per week.

    Luckily, I was already use to meal planning as we have been able to keep our food budget under $100 a week.  This is very good skill to have.  We are excited for the journey we are on financially so I am sure you will be hearing more about it.

    December 30th - January 14th

    Happy New Year!!  It feels good to be getting back to my familiar routines.  I truly am a creature of habit.  I feel very out of control if I don't have a plan for meals each night.  By the time I get home from work, it is a mad dash to get supper on the table before 7:00.   This year I am trying to add more vegetables and fruit to our diet.  My kids are all great about eating most things, so it is just a matter of planning and making more.  I would also like to make dessert once a week.   I will plan it and we will see how that goes!  

    We had a wonderful Christmas with family.  The food was amazing!  My BIL, Danny is a great cook and always brings the main course for our Christmas Celebration.  I will be off for 2 weeks over the holidays.  the first week I truly spent reading,  relaxing and hanging out my with kiddo.   I am now starting week two of vacation and this week means work! We are getting my Father in Law moved into the assisted living facility and his wife will join him in a few weeks.  So this weekend will be spent packing and moving.   I have two more days off and those will be spent getting things done around my house before returning to work.  I want to return to work being caught up on the laundry as well as a few other things.

    Menu Plan

    Thurday 30 - Taco Bake, Corn and Salad  (very quick meal - Good at to Site) 

    Friday - 31 - Frozen Pizza - Packing Day at Inlaws

    Saturday - 1 - Order in - Moving Day for Inlaws

    Sunday - 2 - Rotisserie Chicken/ Mac n Cheese/ Green Beans - Apple Pie -

    Mon -3 - Baked Tilapia, Uncle Ben's Rice and Veggie

    Baked Tilapia (good add to site)

    3/4 cup soft bread crumbs
    1/3 cup grated Parmesan Cheese
    1 tsp garlic salt
    1 tsp. Oregano
    4 Tilapia Fillet

    In a shallow bowl, combine the bread crumbs, cheese, garlic salt, and oregano.  Coat Fillets in crumb mixture.  Place on a baking sheet coated with cooking spray. 

    Bake at 425 for 8-12 minutes or until fish flake easily with a fork.

    Tuesday - 4 - Paprika Chicken with Sour Cream Sauce, Rice, Brussels Sprouts, Salad  (hubby liked...not sure I do)

    Wednesday - 5 - Working Late - Baked Teriyaki Chicken (very Good add to site) served with Hash Brown Casserole  (very Good Add to site) & Broccoli

    Thursday - 6 - Chilli / Corn Bread

    Friday - 7 - Chilli Dogs/ Fries

    Sat -8 - Pioneer Woman's Chicken Strips and Vegetables with Cheese Sauce

    2 Pkg Frozen California - Blend Vegetables
    1 - 8 oz of Velveeta Cubed
    3 Tbsp. Milk

    Microwave Vegetable blend according to the package directions.  In a small saucepan, combine cheese and milk. Cook and stir over low heat until melted.  Serve with vegetables. 

    Sunday - 9 - Pioneer Woman's Chicken Spaghetti / Salad  - Triple Chocolate Cake

    1 pkg White Cake Mix
    1/3 cup sugar
    4 eggs
    1 cup (8oz) sour cream
    2/3 canola oil
    2 Tbsp. Baking Cocoa
    1/2 Cup Miniature Semisweet Chocolate Chips
    1 cup Chocolate Frosting
    2 Tbsp milk

    In a large bowl. combine the cake mix, sugar, eggs, sour cream and oil.  Beat on low for 1 minute; beat on medium for 2 minutes.  Pour half of batter in to a large bowl.  Stir in cocoa until blended. Fold chocolate chips into white cake batter.

    Spoon batter alternately into a greased and floured 10 inch fluted tube pan.  Bake at 350 for 45-50 minutes or until a toothpick inserted near the center comes out clean.  Cool for 15 minutes before removing from pand to a wire rack to cool completely. 

    In a small bowl, combine frosting and milk.  Spoon over top of cooled cake.

    Tuesday -11 -  South Seas Pork Chops, Pineapple Slices, Green Beans, Salad

    Wednesday -12 - Meat Loaf/ Mashed Potatoes/ Corn

    Thursday - 13 - Board Meeting - Spaghetti

    Friday - 14 - Sloppy Joes , Chips

  • Reading: Best of 2010

     

    I am going to share this here as well as on my book blog, Reading in White Bear Lake.  It has been another slow year of reading for me.   Life and work have gotten in the way of my sitting around and reading into the wee hours of the night.  Though on my recently vacation I have been reading many hours each day.   Alas, I have only read 31 books in 2009, but some very good ones!!  You can check out the entire list of books I have read in 2010 on my website.   (which sure needs a overhaul!)

    I love making my list of best books each year.  I forget about all the great books I read in the beginning of the year!  Next, I will enjoy reading other book bloggers lists which will certainly make my "To Be Read" list even longer!

  • Menu Plan for the Holidays

    Menu Plans

    Wednesday - 22 - Country Ham and Cheese Macaroni Casserole, Spinach Salad

    Country Ham and Cheese Macaroni Casserole

    1 lb. smoked cooked ham, chopped
    1 large onion, diced
    1 lb. elbow macaroni
    2 c. shredded extra sharp cheddar cheese (80z)
    1 c. sour cream
    1 can cream of chicken soup
    1/4 c. margarine, melted
    1 c dry, plain bread crumbs

    Boil noodles according to package instructions along with diced onion, until noodles are done. Drain. Meanwhile, mix together rest of ingredients and add salt and pepper to taste. Mix in cooked noodles/onion and add to oven safe casserole dish (greased). Pour bread crumbs evenly over noodles and then pour melted butter over the crumbs.

    Bake for 30-45 minutes at 375 degrees or until cheese is well melted.

     

     

    Thursday - 23 - Parmesan Chicken, Coucous, Corn

    Ribbon Pumpkin Bread

    CHOCOLATE-OATMEAL DROPS - MOM'S RECIPE

    1 stick butter
    1/2 c. milk
    1/3 c. cocoa
    2 c. sugar
    1 tsp. Vanilla

    2 1/2 to 3 c. quick oats

    Bring first 4 ingredients to a boil on stove for 1-2 minutes. Stir constantly. After mixture thickens, remove from heat and add vanilla. Stir in quick oats and drop by spoonful onto wax paper on a cookie sheet. Refrigerate.

    Guacamole/Hummus Dip
    with Veggies

    Mozzarella Sticks (Simple and Delicious Sept/Oct 2009)
    12 pieces String Cheese
    12 eg roll wrappers
    Oil for Deep-fat frying
    Marinara or Spaghetti sauce

    Place a piece of string cheese hear the bottom corner of one egg roll wrapper (keep remaining wrappers covered with a damp paper towel until ready to use).  Fold bottom corner over cheese.  Roll up halfway; fold sides towards center over cheese.  Moisten remianing corner with water; roll up tightly to seal.  Repeat with remaining wrappers and cheese. 

    In an electric skillet, heat 1/2 in of oil to 375.  Fry Sticks, a few at a time, for 30 to 60 seconds on each side or until golden brown.  Drain on paper towels.  Serve with Marinara Sauce.  Yield: 1 Dozen.
