  • Menu Plan Monday: 4/25/11

    4/25/11 - 5/8/11

    4/25 -Monday - BAKED PESTO CHICKEN/ANGEL HAIR PASTA W/HERBS/FRENCH BREAD

    4 boneless skinless chicken breasts
    ½ cup basil pesto
    2 plum tomatoes
    shredded mozzarella cheese

    1. Preheat oven to 400 degrees F. Cover cookie sheet with foil.
    2. Put pesto and chicken in bowl. Toss until chicken is covered.
    3. Bake for 20-25 minutes.
    4. Place slices of tomato on top of chicken and sprinkle with cheese.
    5. Bake another 3-5 minutes.
    6. Serve with a box of angel hair pasta and herbs and French bread.

    26 -Tuesday - Beef Stroganoff/Egg Noodles/Peas/Dinner Rolls (E-374)

    27- Wednesday (working late) - Enchiladas

    28- Thursday (book Group) - BLT Sandwiches/French Fries/Apple Sauce (E 373)

    29- Friday (Heading to Duluth) - ChickenSalad Sandwiches/ Chips

    30 - Saturday (Dad) - Stir Fry

    1 - Sunday (Dad) - Spaghetti/garlic Bread

    2 - Monday (Dad) - Brats and Fries

    3 - Tuesday (Dad) - Frozen Lasagna

    4 - Wednesday (working Late)  - BAKED ZITI/TOSSED SALAD/TOASTED ONION ROLLS

    1 pound dry ziti pasta
    1 onion, chopped
    1 pound lean ground beef
    2 (26 ounce) jars spaghetti sauce
    6 ounces provolone cheese, sliced
    1 ½ cups sour cream
    6 ounces mozzarella cheese, shredded
    2 Tablespoons grated Parmesan cheese

    1. Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain.
    2. In a large skillet, brown onion and ground beef over medium heat.
    3. Add spaghetti sauce, and simmer 15 minutes.
    4. Preheat the oven to 350 degrees F. Butter a 9x13 inch baking dish.
    5. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture.
    6. Top with grated Parmesan cheese.
    7. Bake in the preheated oven for 30 minutes or until cheeses are melted.
    8. Serve with a tossed salad and toasted buttered onion rolls.

    5 - Thursday (Culminating Event) -  Chicken Ceasar Wrap

    6 - Friday - BUBBLE PIZZA

    1 ½ lb. ground beef
    1 jar pizza sauce
    2 tubes refrigerator biscuits
    1 ½ cups shredded mozzarella cheese
    1 cup shredded cheddar cheese

    1. Brown the beef in a skillet and drain.
    2. Stir pizza sauce into browned hamburger and simmer until heated through.
    3. Quarter the biscuits and place in a 13-in x 9-in x 2-in greased baking dish. Top with beef mixture.
    4. Bake uncovered at 400 degrees F for 20 minutes.
    5. Sprinkle with cheeses and bake 5-10 more minutes.

    7 - Saturday - BBQ Pork Sandwiches/Salad/ Baked Beans (E- 373)

    8 - Sunday (Mother's Day) - Parmesan Crust Tilapia/ Rice/ California Medley

    24th - Easter meal with Family.
