  • The weekend is over....it was very productive and I got alot done around the house that I wanted to get done.  I got everything done except for the inventory of Christmas gifts and wrapping.  I will get to that sometime during the week I guess.    Hubby made a huge pot of Chicken Soup, we had it for supper tonight and have left over for tomorrow, plus 6 meals of it in the freezer.   YEAH!!  


    I got most of my home paperwork done too.  I paid bills, reviewed budget and did my church minutes.   I also found about an hour to work on my webpage.  I have not added recipes in ages, so I have a pile to do.

  • Just a quick entry before getting ready for church.   Today on the agenda is....


    Making a bunch of French Toast to Freeze
    Chicken Noodle Soup
    Wrap Christmas Presents
    Finally get my Winter Clothes Out


    Yesterday I got a ton of cooking done!!    I used the 10 pounds of hamburger I bought at Sam's and made 4 meat loaves and just bagged the other up for whatever.    I cooked the huge squash my mom gave us.   Tommy like the squash casserole, Hubby and I didn't care for it much.   We have four more meals of squash in the freezer.   I also made a big pot of Split Pea Soup.   That made about 5 meals of soup so that is in the freezer too!


    Now that my hubby is home on the weekend I can cook and fill our freezer up.  That is going to make it so much easier with the holidays coming up to pull out some supper and easier on the budget too. 


    Off to get ready for church.  Next weekend I am baking cookies at church so I wll have lot of that out of the way!   I will freeze alot of the cookes until December. 

  • Weekend is here and I have most of my errands done already.  YEAH!!  This morning we went to the Library, Aldi (love that store), Post Office, Sam's Club and Bread Thrift Store.  I still need to go to Cub to get a couple of things on my list and coupon items.  The sale ends today.   I was able to get most of the things I needed at Aldi.  I had four bags and two boxes of food and my total spent was 65.00.   Very good on the budget!


    I bought 20 pounds of hamburger at Sam's so I am going to mix up 5 meat loaves for the freezer.   I also have a ham from Aldi so I will make a pot of split pea soup either today or tomorrow.   I might do that today since I am going to try to use the carcasses of the roasted chickens to make soup.  I have never done that, but if it works with Turkey I don't see why it wouldn't work with chicken. 


    I am getting Tommy ready for a nap then I will runto Cub for some sale items we need.   


                             Crock Rotisserie Chicken

      Amount  Measure       Ingredient -- Preparation Method
    --------  ------------  --------------------------------
      1              whole  chicken
                            Lawreys Seasoning Salt
                            Olive Oil
                           

     

    Rub your chicken all over with olive oil and Lowerys and place in crock. Do
    not add water!! Crock on low til done, usually 4-6 hours.

     

    Then I hope to spend the afternoon watching a movie with hubby and typing some recipes into my website.   gotta go....later!

  • Finished my book tonight........Circle of Five by Dolores Stewart Riccio - Good!


    Also finished listening to Five People you Meet in Heaven - by Mitch Albom - Good!


    I am going to try this recipe tomorrow with the squash my mom brought for me...


    SQUASH CASSEROLE:
    2 cups partially cooked squash (Zuchinni or yellow is what we use)
    1 med onion, chopped
    1/2 pkg. stuffing
    1 can cream mushroom soup
    1 cup milk
    salt and pepper to taste
    Mix all, place in greased 2 qt. casserole Bake 325 for 30 minutes.


    I am starting a new book tonight and tomorrow is library day!  Off to read...Night!

  • Cleaning up my desk and then I am heading home!   I have worked well over my 40 and I am taking some work home for the weekend. 


    I thought we were just going to have Tommy and a quiet weekend, but Josh has a dance tomorrow night and has decided not to go to his dad's again.   Not sure how I feel about that, but I am letting him work that out with his dad.

  • Well I just reserved a million books and movies from the library.   I will have to post a list of the different holiday books and movies we enjoy!   It is great to know the names so you can easily find them at the library.    I reserved alot of Thaksgiving and Christmas things for our family.   We will take a numer of them with us to South Dakota so Tommy has some things to keep him busy at his Grandparents!  

  • What a nice day off this has been.  We slept in...and then went Christmas shopping.  I bought all the toys for Erik and Tommy.  All I have left to do is buy some stocking stuffers and the rest of the family gift from Santa.  Hubby and I went out for lunch at the Great Moon Buffet and boy did I eat!!   Hubby is now napping on the couch.  I am going to read for a bit and then I am getting my haircut/eye brows waxed, getting a shot at the clinic and have a chiropractor appointment.   So the rest of my afternoon is busy!


    I would really like to have all my Chirstmas shopping for SD done by Thanksgiving so I can take the presents with us when we go.  It is better than mailing stuff or waiting until my parents come in January for my birthday.

  • Morning....well I got to sleep in this morning!!  YEAH....I didn't get up until 7:00.  Today is my day off in observance of Vetran's Day.  I have started some laundry and Tommy will be going to daycare today.   Hubby and I are going to go Christmas shopping after we drop him off and then out ot lunch.  Should be a relaxing day...I am going to try to not work, but I do have alot of stuff to do.  I figure if I don't work today I can work a bit this weekend.  I am going to end up working well over 50 hours this week.   But last night was worth it, I went to school conferences for two little kids with autism and I am so happy of the progress they are making!  Their mom is workin so hard and it is evident. 


     

  • Morning.....my last late night working for the week.  YEAH....tomorrow I am off as it is a holiday, but I might work a few hours.  We will see.   Friday I am only working 8 hours!  I will have over 50 hours in so I am building up some time off for January!  I am going in at the normal time today and I have school conferences/IEP's at 4:00 and 7:00pm so it will be around 9 by the time I get home. 


    What to do with a day off..........for the first time ever hubby also has the day off.  He now works for the government too, so we have similiar days off.   We are going to sleep in a bit and then go out to lunch and Christmas shopping.   Tommy will be at daycare and last night his cousin called and asked if he could come over after daycare to play so it will be very quiet around here.   Hopefully I will get some time to read and I might work for a couple of hours or maybe I will save the work for the weekend.  I also have to type the minutes for my commitee at chruch and make some flyers for some upcoming events we are hosting. 


    Well I am off to fold a load of laundry while I wait for my turn in the shower.  I might even do a couple of things in the kitchen if I get time.  I have been managing to get two loads of laundry done each morning before heading to work so I am not behind!!!  Have a great day!
