  • Alfredo Chicken Pizza


    • Your favorite pizza dough recipe (see notes above)
    • 1 jar (1 lb.) of alfredo sauce  (Jen's Note:  don't use whole jar - too saucy)
    • 2 pieces grilled chicken (from Monday), shredded
    • 2 cups Mozzarella Cheese
    • 1 cup Parmesan Cheese
    • 1 pkg. (8 oz.) sliced mushrooms

    Make pizza dough according to recipe and roll out on a pizza stone or pan. Layer remaining ingredients in order given. Cook at 400° until brown and bubbly

  • Morning....yep I am off to a late start today.   I stayed in bed after I woke up and finished my book.  LOL!!   It was nice.  My back was hurting a lot when I woke, so I laid on the heating pad and read until 10:00.

    House of Spirits and Whispers by Annie Wilder - 4/5
    This book was written by a friend of one of my book group members.  It is a true story of the haunted house she lives in.  This make it much more interesting.   I can't figure out which friend in the book is the member of our book group.   Names had been changed. 


    YESTERDAY:


    Tommy seems to be feeling better.  It was nice to be home yesterday though.  I got a few things done around the house.  I made a nice supper for the family.  We had grilled Chicken,  Baked Rice and Chinese Cabbage Salad.   Everyone loved it all.   After supper we went to Aldi and got groceries for the week.  I had to stock up on alot of things since I didn't buy much last week.   I will update my online menu today as well.   (DONE)


    I put away all the groceries and washed dishes.  Josh went to a bonfire at a friends house and Erik is at his mom's.  Hubby made cookies and then we went to bed.  I was pretty tired!  I didn't even hear Josh come home last night.  The nicest things is I can trust he will come home when I asked him to.  He is a good boy!   I only pray the other two boys are such easy teenagers. 


    TODAY


    I stayed in bed until 10:00 to finish my book then got up and showered.   Hubby went to get gas for the lawnmower.  The neighbor is coming over to aerated our lawn.   After he is done with that we will got to the library and run a few other errands.

    TOMORROW:


    Church in the morning and would love to take Tommy to the apple orchard to walk around a bit.   Not much planned for the day I really want a quiet weekend.  I need it I have been feeling pretty stressed lately with work and stuff.

  • Morning....Tommy woke up at 5:00 not feeling well.  He was crying his tummy hurt.  So hubby got up with him and gave him some crackers to eat and juice.   That didn't help and he is still not feeling well.   So I guess that changes my plans for today.   I was suppose to work today and I had 3 home visits scheduled.   I will have to cancel them as I need to stay home with Tommy.   I think he might have what I had on Wednesday.   Poor Little Guy.


    TODAY -


    Care for Tommy - do a few things around the house.   I need to call and schedule Tommy's preschool screening for Kindergarten.  I also need to do my menu and shopping list for the week.    Tommy seems to just want to lay on the couch.

  • I didn't get much done yesterday.  I wasn't feeling very well.   I did manage to finish my book    Never too sick to read.   Hubby and I didn't go to church since I wasn't feeling very well.   We all went to bed early.


    EAST OF EDEN - JOHN STEINBECK - 5/5


    TODAY -   I still woke up not feeling very well today.   I thought of not going to work, but I have too much to do.    So I will muddle through the day.  I only have two days left and then I can rest for the weekend. 


    Hubby was annoying me this morning so I pretty crabby.   He forgets everything and it gets so frustrating.  It is my job to remind him of everything he needs to know.  When he didn't do something it is because I reminded him at the wrong time.  ARGH!!   Gee even if I reminded 5 times at the wrong time you would think it might get done.   Having three kids and a full-time job is enough for me to remember most days. 


    Today on the agenda is taking Tommy to preschool and then head to work for unit meeting.   After of course I fill my own tires with air.   I have one homevisit this afternoon and then I am coming home.  Tonight is chore night and the kids get their allowance if they have their stuff done.  I need to make out our menu and shopping list for the week. 


    TOMORROW :  FRIDAY....YEAH!!   I have three homevisits on Friday and the last one of the day isn't until 6:00 so it will be a late night.  I really am looking forward to the weekend and not having to do homework all weekend.  I am looking forward to a quiet weekend.  My SIL mentioned maybe taking Tommy overnight on Friday night.  So maybe I will get a good night sleep.  I could use that. 


     I won't be able to get groceries until Saturday morning since I have to work late on Friday.   Friday is payday so I have to wait for $$ to get groceries.  So Saturday morning will be groceries and library.   


    I better get ready for work since I have to stop at the gas station after dropping off Tommy.  I can't be late for Unit meeting, which I probably will be.  


     

  • Tommy and I finally are starting our day.  I fell back asleep on the couch once my SIL came to get the kids.   OOPS....we are now heading out to get Josh's pics.   I have to clean up the house when I get home.  6 kids can make a bit of a mess....opps...

  • Good Morning.   It is my day off...YEAH!!   I am so happy about that.   I will have Tommy home with me all day since my SIL is going to the funeral today. 


    YESTERDAY


    Hubby picked up my license plates for the van.  Thank you!   Then I came home and our neighbor boy, Charlie watched Tommy for us while Josh was finished mowing for the neighbors.   We went to the wake.    My little niece kept going up to the casket.  She really didn't understand all this.  I left the wake with three extra children in tow.    My nieces and nephew slept over.   I thought my nephew would have trouble with this, as change can be a problem.  He has Aspergers.   But he was the easiest one to get to sleep.   Tommy and my youngest niece both tried to sleep in bed with hubby and I.   Once my niece fell asleep hubby put her into Tommy's bed.   Tommy slept with us, surprise, surprise....he was a very restless sleeper last night so a lot of moving around and kicking all night.  


    So 6 kids fed and put to bed by around 10:00. 


    TODAY


    Everyone is starting to wake up.  Josh has left for school.   Erik is up and showered.  Nick (nephew) has been up since like 5;00.  YIKES!   The other three are still sleeping.  I am going to let them sleep until about 8:00 and then I have to get them up.   Their parents are coming to get them at 9:00.   The funeral is at 11:00.   I won't be able to go since I have Tommy all day.  I don't want to take him. 


    Today I need to go and get Josh's Senior Pics.  Otherwise Tommy and I are just going to hang out.   Erik is suppose to stay after school tonight so we will see if he does.   He didn't last week, when he was suppose to.  Tonight is Church...so no cooking for me. 


    Have a great day...I better get going I have three more kids to get up.

  • Hello Everyone!   It is Tuesday and I back at work.  I am on hold with Social Security so I thought I would type at you while I wait.  Should be plenty time to get a post done!


    This week is turning out to be very busy, but it is the busy time of year at work. 


    A GLANCE AT JEN'S WEEK:


    MONDAY - I had a hard time sleeping on Sunday night.  The last time I looked at the clock it said 2:30am.  ARGH...well the alarm goes off at 5:30 so that equals very little sleep for me.   I did make it through Monday fine and actually worked 12 hours, with a little help from my dear DT. MT DEW.   I drove home and collapsed right into bed.     Tommy was up waiting for me of course.   He fell asleep while I was reading.  Hubby was great and had done some laundry for me and Josh had done his dishes.  


    Weight Watchers - I stayed within my 20 points for the day.


    TUESDAY - This morning I slept in a bit since I had to take Tommy to preschool at 9:00 before going to work.   I don't work until 10:00 on Tuesdays.  I got up and got Erik out the door.  Then I got ready for work and packed my lunch for work.   I am trying to count my points better this week.  If I only eat what is in my lunch bag for the day, I will have only 19 points eaten for today.    I updated my checkbook and then got Tommy ready for school.


    When we got to preschool I find out it was Bike Day.  OOPS...I must have missed that note from school.   So I had to run home and get his bike and helmet.  The nice things is the preschool is less than 2 blocks from our house.  


    Today my temporary plates on the new van expire.  I called the dealership and they are going to check if they plates are in yet.  ARGH...Hubby is going to drive after work to pick them up if they are in as I have to work until 8:00 tonight and they are only open until 7:00.   Too many things to do and not enough me to spread around!   I also asked hubby to pick up Josh's Senior Pics as they are on the way to the dealership.    His pics are in Fridley.   If not I will go get them tomorrow. 


    So that is my busy day for today.  Man, Social Security still hasn't answered the phone yet, so I can keep typing!


    TOMORROW - (WEDNESDAY)  I HAVE THE DAY OFF!!    I have a ton of things to take care of on my day off.    I might have to pick up the license plates at the dealership and Josh's pictures depending on if hubby is able to do it tonight or not.   Then I have to transfer the title on the car we bought for Josh.  


    The rest of the day I need to do a few things around the house.   I need to do a bit of laundry, put clean clothes away, go through my winter clothes for work.   I also need to get bills and grocery/menu done for next week.  


    I also need to go to the chiropractor and we have church in the evening. 


    THURSDAY - I am working from 10-5 so will actually be home to see my family and help out with things.


    FRIDAY - I have to work a late night - 9:00 to about 8:00.  Erik will be going to his Mom's for the weekend.  He really wants to go to the event at church on Friday night so I hope she takes him.  He also I think is suppose to start his service job at church on Saturday.  I need to email Linsey about that one. 


    WEEKEND - NOTHING!!  I need a nothing weekend.   I want to read and do things around the house.  Maybe even rent a movie, go for a walk, bake.....whatever I feel like doing.  And of course nap!  A two weekend nap would be heavenly.  


    Well I am to the end of my exciting (LOL) week and still social security hasn't answered!  YIKES....well I can't think of anything else to say!    I will have to find other work to do. 


    Oh yeah...my truck...we decided to keep it.  We had it at the owner to owner lot over the weekend and it didn't sell.   No one wants a truck with the way gas prices are.  So we are keeping it and hubby will drive it to and from work.   Which he is pretty happy about...which means I am a van driver now....just call me soccer mom.  LOL!!  I am sure I will get used to it...it does have a 6 disc changer so it is nice to load that up with my book on tape and listen and listen....


     HAVE A GREAT DAY!!
