    June 17th – June 30th, 2012
     

    Sunday – 17thMexican Chicken And Rice  – Good, Make Again.

    Monday – 18th (3:45 appt) – Chef Salad

    Tues, 19th - (Game) – Hot Honey Mustard Subs/ Chips and Dip/Celery with Peanut Butter

    1 lb thinly sliced deli ham
    8 oz sliced cheddar cheese
    6 ct pkg bakery buns or large rolls
    (Honey mustard)
    1 pkg chips, any
    Celery sticks
    (Peanut butter)

    Layer inside of buns w/ honey mustard, ham,
    then cheese. Wrap each in foil. Bake @ 350°,
    15 min.
    Serve w/ chips & celery sticks / peanut butter.

    Wed,  20th - Sausage Rice Casserole , Vegetable

    Thurs, 21st (Game) – Chilli (Crockpot)

    Makes 6-8 servings

    Prep Time: 25 minutes
    Cooking Time: 6 hours

    1 lb. ground beef or turkey
    2 – 15-oz. cans tomato sauce
    2 – 15-oz. cans kidney bens or black beans, drained
    1 envelope dry chili seasoning
    15-oz can of water, or more or less

    Brown ground beef or turkey in a non-stick skillet. Drain

    Combine all ingredients in the slow cooker.

    Cover and cook on Low for 6 hours.

    Sat ,  23rd (Red Wing) Bacon Tomato Grilled Cheese/ Noodle Soup

    BACON -TOMATO GRILLED CHEESE

    8 slices sourdough bread
    4 slices mozzarella cheese
    2 large tomatoes, thinly sliced
    8 bacon strips, cooked
    4 tablespoons sour cream
    4 tablespoons finely chopped onion
    1/4 teaspoon dried oregano
    4 slices cheddar cheese
    2 tablespoons butter, softened

    For each sandwich, top one slice of bread with one slice of mozzarella cheese, a fourth of the tomato slices, two bacon strips, 1 tablespoon sour cream, 1 tablespoon onion, a pinch of oregano, one slice of cheddar cheese and another slice of bread.  Spread outside of sandwiches with butter.  On a hot griddle over medium heat, grill sandwiches for 3-4 minutes on each side or until lightly toasted.  Yield:  4 servings

    Monday – 4th (Mom works Late) – Sausage Rice Casserole , Vegetable

    Tuesday – (School Play) – Fried Eggs and Bacon with Toast

    Wednesday – (Mom Works Late) – Mexican Chicken And Rice

    Thursday – (Game – Mahtomedi) – Pizza Sandwiches/Carrots & Celery and Dip

    Ingredients
    •8 slices Italian bread (3/4 inch thick)
    •8 slices part-skim mozzarella cheese
    •8 slices tomato
    •4 teaspoons grated Parmesan cheese
    •1/4 teaspoon garlic salt
    •24 slices pepperoni
    •1/4 cup butter, softened
    •Pizza sauce, warmed

    Directions
    •On four slices of bread, layer one slice of mozzarella, two slices of tomato, 1 teaspoon Parmesan cheese, a dash of garlic salt and six slices pepperoni. Top with remaining mozzarella and bread. Spread outside of sandwiches with butter.
    • On a hot griddle, toast sandwiches for 3-4 minutes on each side or until golden brown. Serve with pizza sauce. Yield: 4 servings.

    Friday – OFF – Ranch Burgers – Ceasar Salad – (E-mealz Aldi 411)

    1½ lbs ground beef
    1 pkg dry ranch salad dressing mix
    1 c sour cream
    1 pkg Kaiser buns
    2 tomatoes, sliced
    1 Caesar salad kit

    Combine 2 T salad dressing mix and ¼ c
    sour cream. Mix with ground beef and form into
    6 patties. Grill or cook in skillet 10 -12 minutes,
    turning once. Combine the remaining dressing
    mix and sour cream. Spread on rolls. Serve
    meat on rolls and top with tomatoes.

    Saturday – Joyful Noise – LEFTOVERS

    Sunday – (Bridal Shower) - Meatloaf / Mashed Potatoes/ Corn

    Monday – (Soccer Practice) – Crispy Pork Chops , Apple Sauce and Peas

    Tuesday 12 – (Book Group/Soccer) – Chicken Salad – Crossiants

    Wednesday – Hot Honey Mustard Subs/ Chips and Dip/Celery with Peanut Butter

  • Menu Plan

    Wed – 4/25 – Chicken Broccoli and Rice (quick meal) – Salad

    Ingredients:
    2 cups diced cooked chicken
    1 1/2 cups water
    1 can Cream of Chicken Soup
    2 cups Broccoli (I use frozen, straight out of the freezer)
    2 cups Instant Rice

    Process:
    In a large skillet, make sure that you chicken is warm and put aside in a bowl. Then mix water and soup together and bring to a boil (now is when you add any seasonings). Turn down and mix in all ingredients remaining. Cover and cook on medium/low for 5 minutes. If you are using frozen broccoli it will take up to another 5 minutes.

    Friday – 4/27 – Tacos for a Crowd and Mexican Dip

    RECIPE INGREDIENTS:
     1 16-oz. tin 3-bean mix 
    Dip
    3 ripe avocados, mashed 
     1 1/2 tbsp. sour cream 
     1 pkg. taco seasoning mix 
     Chopped tomatoes (to taste) 
     Grated cheddar cheese (to taste) 
     Chopped shallots (to taste) 

    1. Pour beans into a serving dish.

    2. Mix mashed avocadoes, sour cream and taco mix in a bowl. Spread over beans. Top with chopped tomatoes, cheese and shallots.

    3. Serve with corn chips.
     
     

    Saturday – 4/28 – BAKED PESTO CHICKEN/ANGEL HAIR PASTA W/HERBS/FRENCH BREAD

    4 boneless skinless chicken breasts
    ½ cup basil pesto
    2 plum tomatoes
    shredded mozzarella cheese

    1. Preheat oven to 400 degrees F. Cover cookie sheet with foil.
    2. Put pesto and chicken in bowl. Toss until chicken is covered.
    3. Bake for 20-25 minutes.
    4. Place slices of tomato on top of chicken and sprinkle with cheese.
    5. Bake another 3-5 minutes.
    6. Serve with a box of angel hair pasta and herbs and French bread.

    Sunday – 4/29 -  Parmesan Crust Tilapia/ Rice/ California Medley

    Monday – 4/30 – Crustless Quiche/Cantaloupe/Biscuit

    CRUSTLESS QUICHE
    5 eggs
    1/4 cup flour
    1/2 tsp. salt
    1/2 tsp. baking powder
    1/2 stick melted butter
    1 cup cottage cheese
    1/2 lb. grated cheddar cheese
    Combine all ingredients and pour into a well-greased 9×9 pan. Bake at 400° for 15 minutes. Reduce to 350° and cook for 30-40 more minutes. – Menus4moms.com

    Monday 2 (working late) - 

    Baked Spaghetti

    1 pound ground beef
    1 26-ounce jar spaghetti sauce
    1 pound angel hair pasta
    2 cups shredded Cheddar cheese, divided

    Preheat oven to 350 F. In large skillet, cook ground beef until brown; drain. Mix spaghetti sauce into skillet. Reduce heat and simmer. Meanwhile, bring a large pot of lightly salted water to a boil. Mix in pasta and cook until al dente, about 4 or 5 minutes for angel hair. Drain. Mix together spaghetti and meat mixture. Stir in 1 cup cheese. Pour into 9 x 13-inch pan. Top with the remaining cheese and bake for 30 minutes, or until heated through and cheese is bubbly. Serves: 6 to 8.

    Wed -4 – Bruschette Chicken Bake and Salad

    Thurs – 5  (Working Late) – Sunny Side Eggs, Sausage and Toast

    Save yourself from the 5:00 chaos of “what is for dinner?” by meal planning.  Most people say to me, I could never do that!   I suggest you give meal planning a try for one week and see if you don’t have a better week.  Now, don’t plan difficult meals, simply find quick meals and purchase the items for those meals.  Trust me, you won’t know how you ever managed before.   McDonald’s will still be in busy if you aren’t driving through weekly due to no idea what to make for supper.   Your family will thank you!   So set aside one hour to make your weekly menu and shopping list!
     
    New Favorites from Last Week include the following:
     
    Baked Shrimp Scampi /  – made this for Valentine’s Day and it was a BIG HIT!
     
    Slow Cooker Fajitas (8-9 hours)
     
     
     
     
    I did something a little different this week and I need your opinion about how well this works.  It seems to work fine on my side of the screen, but I want to know what your experience is, so please comment!   Instead of linking to each recipe, I put most of my recipes into my google calendar.   I have started using my google calendar for menu planning.   It is great!!
     
    What I do is put my menu plan and recipes in Google Calendar, if my family likes a meal, I simple edit that entry and have that event repeat every 10 weeks.  So we will eat a favorite meal approximately 5 times a year.   I have been doing this for a few weeks and it makes meal planning even quicker, since my future menu plan is building itself.  
     
    If we don’t feel like eating what comes up or I want to try a new recipe, I simple delete that incident of the recipe and add my new recipe.   The old recipe will show up again in 10 weeks.   It is a fast way to make sure family favorites are made again.  My family’s frequent complaint is that once I make a meal and they love it….I never make it again.  Now they know I won’t lose the recipe and they will get to enjoy that meal again in 10 weeks.
